CHOICE RECIPES.
Yeast. Tho foundation of good bread
jb good yeast. Wo havo triod many
receipts for yeast, but havo found nono
equal to tho ono wo now glvo : Put a
handful of hops, tied in a small bag, in
two quartB of wntcr, and boil for half tin
hour; paro nnd grata half a dozon raw
potatoes of medium eizo; pour tho
wntcr in which tho hops havo bcon boil
cd, having squeezed out tho bag, over
tho potatoes ; add half a cupful of sugar
and a littlo less quantity of salt; let it
stand until it becomes tnpid ; add a pint
of good yeast ; lot it rise, stirring fre
quently ; put in a crock, and keep it in
a cool pluco. With good Hour and this
yeast, I never fail to havo good broad.
Milk Soui. Four potatoes, two oni
ons, two ounces of butter, quartor of an
ounco of Bait, pepper to taste, ono pint
of milk, throo tablcspoonsful of tapioca.
Soil slowly all tho vegetables with two
quarts of wator. Strain through tho
colander. Add milk and tapioca. Boil
slowly and stir constantly for twonty
minutes.
Gravy for Boiled Meat. Tako a
half-pint of tho water in which tho moat
has bcon boiled, thicken it with a littlo
flour nnd butter, adding for a flavor a
tablcspoonful of pickled cucumbers and
a sprig or two of parsley, both flaoly
mincod. A littlo mustard and vinegar
may bo added if likod. Sorvo in a
turcon.
CrtEAM Tie. First bnko a puff pasto
in a pio-platoj then mako u custard of
tho yolks of four eggs, a littlo moro
than a pint of milk, ono tablcspoonful
of corn starch, six tablespoon fuls of
sugar. Save out two spoon fuls of sugar
and beat to a stiff froth with tho whites
of tho eggs. Flavor tho custard with
vanilla, put it into tho crust, spread tho
whites ovor tho tops, and put them into
' tho oven to'brown.
Boiled Custard. Fut two tablo
epoonfuls of wntor in tho kcttlo first, to
keep tho custard from Bticking. Then
add ono quart of milk, two tablcspoon
ful of sugar, two eggs (tho oggs and
sugar boaton together) and two slices
of broad. If luud, dry bread is usod, it
should bo soaked in water awhilo before
making tho custard. Aftor putting it
on tho stovo, wntch it closoly, for as
soon as it boils it is done.
BoTTKnED ParsnIps. Wash and boil
in cold salted wator from three-quarters
to nn hour. Skin and cut into round,
thick slices. Havo ready in a sauco
pan a tablcspoonful of buttor aud ono
tcaspoonful of flour, previously rubbed
together, and two tablcspoonfuls of
milk. When it boils up, put in tho
parsnips and shako over tho flro until
smoking hot. Sorvo hot in a covered
dish.
Coffee Cake. Four ono cup of boil
ing hot, strong coffoo on ono cup of lard
or pork fat, add ono cup of molassos,
ono cup of brown sugar, three well
beaten eggs, ono tcaspoonful oich of
cloves, cinnamon, allspico, one-half of
nutmeg, ono tcaspoonful of soda dis
solved in a little warm water, flour
enough to mako n stiff batter. Bako in
shoet iron pans one hour and a half in
a slow oven.
TRUE HOSPITALITY.
Tho announcement of tho coming of
a visitor into tho family for a fow days
or weeks, as it may bo, is genorally fol
lowed by a great deal of worriment and
anxiety on the part of tho housekoeper
for foar everything will not bo right.
Sho must go all over tho house with
broom and duster in hand, to bo suro
everything is clean and nico for tho
coming guest. Even tho attick, used
only as a receptaclo for discarded f urni
turo and clothes, must bo visited and
put to rights. Why sho should think
a guest would want to rummago in this
place, or poko into storo closets, which
they never do, U a strange idea, but it
do;s appear as though that is her
thought, or why does she go into every
hole and corner, afraid something would
bo left undone. Should tho expected
visitor be a. slight acquaintance, never
having been her guest beforo, to bo sure
it is but natural sho should be a littlo
nervous about his or her coming, and
like that her home should make a good
impre&sion on him.
But when the coming guest is an old
friond or acquaintance, it does seem ab
surd that sho should go through the
same routine as for an almost entire
stranger, yet that U exactly what she
does, giving the impression that the per
son expected is coming with the expresa
purposo of picking out any mistakes
that sho has mado in her housekeeping.
Sho is so tirod out from work and
worry that when tho guost docs arrive
sho is not prepared to greet hor as cor
dially as sho should, and tho wclcomo is
forcod and strained. Tho visitor, if she
is a sonsitivo person, quickly notices tho
lack of warmth, that clomont which is
tho pulso of a hearty grocting, and
wonders could sho havo mado a mistako
in coming. Tho guost, though an old
friend, is shown to hor room with as
much ceremony as though sho woro a
stranger, and tho busy housokeopor ex
ousos liorsclf and hurries to tho kitchon
to sco that tho dinner or tea, whichovcr
it may bo, is served on timo. Tho best
silver and china must bo used at ovcry
meal, and tho rarest viands that tho
hostess can afford aro on tho tnblo. Tho
visitor, who has looked forward to hav
ing tho company of her friond, for
months, oxpecting to bo troatcd as ono
of tho family, fcols out of pluco as an
honored guost, and nt tho closo of her
stay leaves with a kcon feeling that hor
visit had been a falluro both to herself
and hor hostess. Sho would havo pro
ferred, had sho tho choico, moro of hor
frionds company and loss of her china
and delicacies.
It is a grnvo mistako to treat frionds
in such a way, though it is dono with
tho best intentions. Truo Lospitality in
relation to guests consists in making
them fcol thoroughly at homo, and for
this end only should tho housokeopor
work. No person can fcol at homo in
tho house of a friond who feels that his
or hor stay is tho sourco of anxioty and
and worriment to any of tho family,
and if of a suscoptiblo naturo ho will
assuredly closo his visit as soon as pos
sible. Do not mako strangors of friends
but let them enter into tho homo life.
It will bo less worry and caro for tho
housokocpor and moro cnjoyablo to tho
guost. Should tho visitor bo a woman,
and you do not keep hired help, let her
assist you in tho housework if sho so
desires, and sho will bo bottor pleased
than if you had provided tho finost on
tertflinment which you could for her.
A woman is novor so much at homo as
when sho is doing housowork, and you
will bo surprised to sco how quickly
your guest merges into a member of
tho family whon assisting you in your
labors. Whon sho departs sho will tako
with hor, and, paradoxical ns it may
scorn, Icavo behind, tho romombranco
of a homo-like, cnjoyablo visit.
A Hairpin Caibloa.
A pretty accessories to tho dressing
tablo is mado by getting a small round
box, liko thoso in which thimblos comos
in tho thimbles, or, if this is difllcult to
obtain, a smnll round collar box cut
down to about half its dopth will do
nicely. Fasten across the open top somo
coarso netting and cover tho bottom
with somo pretty papor. Trobln crochet
a covor to tho rim of tho bottom, then
crochet n row or two of sholls, according
to tho dopth of tho box, around tho
bottom so that when on tho box thoy
will lio flat. Tho ribbon of tho samo
shado as tho cover, and fasten in a neat
bow, or a bow with long ends. This
makes a very pretty miunturo sailor hat
tho top of tho crown being used as a
cushion for hairpins.
Narrow Lace.
Cast on 7 stitches and knit across
plain. 1st row knit !), ovor, narrow,
ovor 2, knit 2. 2d row knit 3, seam 1,
knit 2, over, narrow, knit 1. 3d row
slip 1, knit 2, over, narrow, knit 1. 4th
row bind off 2, knit -3, ovor, narrow,
knit 1.
Fluted Lacs.
Cast on 18 stitches and knit across
plain. 1st row knit plain. 2d row
soam 14; pay no attention to tho re
maining stitches but turn. 3d row
Slip off tho first stitch of tho fourteenth
stitches on tho right handed noodle with
the d left, knit 9, narrow, over 2, knit 2.
1th row seam 14, making but 1 stitch
of the loops. 6th row slip 1, knit 13.
Oth row knit 18. 7th row knit 4,
seam 14. 8th row knit 1, narrow, ovor
twice, knit 11. Oth row slip l,soam 13.
10th row knit 18 ; begin at first row to
repeat.

over, tho last one was sont to tho printer,
and wo felt rather discourngod for foar
there would bo nono for this week. But
boforo many days tho mail brought
enough to fill tho spaco we havo. Only
onco navo tuo young folks iiulou to
write Thero was a timo when thoro
would bo twenty or thirty lottors on
hand. Ono reason that wo have so fow
now is that so few writo regularly.
Many moro writo but tho first ono.
Leo tells of a horso twcnty-fivo years
old. Is not that wonderful? It is said
that a horso would livo to bo vory old if
only treated well, but thoy aro not capa
ble of standing rough UBago, and it is
very uncommon to sco ono oven twelvo
years old. It is a good, kind man that
can show so aged an animal. Thcro is
nodomestio animal that is so usoful
and so necessary to man as tho horso,
and yet how cruelly thoy aro abused by
ovorwork and neglect. Tho caro of
bees is a very intorosting study. Thoy
havo curious ways and habits. When n
littlo girl, wo usod to sit by tho boo
hives and watch them. If n strango boo
comes to tho hivo thoy will drivo it
away. Sometimes ono colony will steal
tho honoy from another, and think, it is
usual for tho workers to kilt tho drones,
or thoso who will not work. It is said
tho avcrago ago of n working bco is only
six months. It is interesting to read
about tho bee. Thoy aro a symbol of
industry and forethought, in providing
for winter food. It is said that bees that
aro taken to a warm climato after a
wliilo loso that name, nnd do not lay
up honoy. Loo must tell us moro of
tlicso bees.
Ncllio writes n nico letter. May Day
was not sunny or warm, so Ncllio did
not get many flowers, wo guess Novor
has thoro boon bo wet and cold n spring.
Aunt Hetty's flower seeds havo not
como up well, but tho woods grow well
enough. Its nieo to havo frionds como
so far to visit. Nollio must try and do
hor part in making tho visit pleasant.
A littlo girl can do a groat deal toward
making a pleasant, cheerful homo, in
trying to bo helpful, usoful, and with a
chcorful way doing nil sho can of tho
household duties anything to mako
things smooth. A cross, solfish girl can
mako a houso uncomfortable.

I thought I would write. I am a littlo
boy olovon years old. I wont to school
six months this winter, but school is out
now. I studied in tho clcmontary arith
metic, nnd read in the fourth roadcr, and
spelling, and tho olomentary geography.
My papa takes tho Farmer, and I likp
to read tho young folks' lottors. My
brother Charles had a swarm of bees
tho 28th of April, this year. Wo havo
six head of horsos. Wo havo a maro 25
years old, and sho has a colt that is
eight months old. Littlo boys, can any
of you beat that for an old maro? Sho
