CHOICE RECIPES.
Cottage Pudding. Ono oup of sugnr
ono tablespoonful of buttor, ono cup of
milk, two eggs, two cups 'prepared flour.
Cream tho butter nnd sugar, ndd tho
whippod yolks of tho oggs,tho milk, the
flour nnd tho beaten -whites. Uako in a
brick-shaped mould well grcasod, and
slice crosswise Eat with cither hard or
liquid sauce.
Aiti.k Custard Pie. Thrco cups
stowed apples ; ono oup whito sugar ; six
eggs ; ono quart milk. Peat tho eggs
light, and mix tho yolks woll with tho
applo, seasoning with nutmogonly. Stir
in tho milk gradually, bentlng as yon
go on ; finally add tho whites, fill tho
crust, and bnko without cover.
Corn Puddiko Drain tho liquor from
a can of corn and chop tho kernols vory
fine. Pub togothcr a tablespoonful of
butter and sugar, add a beaten egg and
two cupfuls of milk. Stir tho chopped
corn into this, salt slightly and bako in
a good oven for half an hour.
Delicious Dish ok Aprua. Tnko two
pounds of npplos, pare nnd coro thorn
Slico thorn into a pan, add ono pound of
loaf sugar and tho juico of throo lomons;
lot them boil about two hours, turn into
n dish nnd servo with thick cream,
Aiti.e Fritters. Make a smooth
hatter of one-half pound of flour, thrco
eggs and a half pint of sweet milk ; salt
to taste, cut ono dozon largo juicy np
plos into slicuB, aftor pooling and com
ing them. Put tho slices into tho bat
ter. Havo ready a pan of equal parts of
lard and buttor boiling hot. Tako tho
battor in a ladlo, allowing n slico of ap
plo to each fritter, and drop into tho
hot lard. Fry brown, drain n momont
and servo with powdered sugar und
nutmeg.
Potato Salad. Tho potatoes aro first
boilod tend or, then cut into littlo cubes
or slicoH, and laid loosely upon tho plato
which thoy nro to bo laid. Pour upon a
tenspoonful of salt, two of sugar, and a
heaping ono of mustard, enough boil
ing water to mako mix well.
Si'ONOK Cakk. Four eggs, ono turn
blor each of whito sugar and flour, two
tublcspoonfuls of sweet milk, ono tea
spoonful of cream of tartar, ono-hnlf
teaspoon ful of soda, lemon and salt.
Cm- Puddincj. Mako a batter ns if for
wnfllos. To ono pint of milk allow two
egg. and enough flout to thicken. Ono
toaspoonful of baking powdor should bo
stirred into tho flour. Fill a sufficient
number of teacups with this and with
fruit if you wish, currants and rasins in
layors. Then set tho cups in a stcamor
and lot the water boil underneath for a
full hour ; sorvo whilo hot with a sugar
aud butter eauco or crenm. Jam or
chopped apples can bo used in placo of
currants and raisins.
Potato Puddino. Ono pound of po
tatoes, aftor they aro boiled and strained.
peel beforo boiling; ono pound whito
sugar, throo-fourths pound of butter,
six eggs, yolks and whites boaten sep
arately ; tho whites must bo stiff enough
to stand alone. Flavor with vanilla.
Bako in a crust without a top, If it
browns too rapidly in baking, covor with
a greased paper.
Mayonnaise Dressing. Tako tho
yolks of throo uncooked oggs, one table
spoonful of mustard, three tablespoon
fnls of sugar, one teaspoon ful salt, a
very littlo cayenno pepper, one-third
cupful of vinogar, half a pint of olivo
oil, and half a lemon. Boat tho yolks,
mustard, sugar, etc., until smooth, thon
by degrees add tho oil and vinegar. Tho
dressing should bo quite thick after 'the
last of. tho oil -is added. Laitly stir in
tho lemon juice; then put it on ice
until wanted.

I navo been reading tho littlo folks let
tors in tho Homo Circlo and thought I
would writo ono too. When I read
James Hayes letter about being boss of
tho livery stablo it mado me want to ask
him how old ho was whon ho commonc
od to harness up horses and what all did
ho do with horse). I would liko to havo
him toll in his next letter. I am only 10
years old but think I can beat him with
horses. Wo havo lost two span of horses
this winter and I almost cried when one
span died ; it was papa's largest team.
Wo havo got tho boss team left to sleigh
rido with. I havo ono Bister and ono
brother ; my sister is married and my
brother is older than I. Wo slash brush
every foronoon for tho goats to cat, as
thoy like them better than any thing else,
and thon wo go sleigh riding in tho
afternoon. Tho snow has been on two
weeks and it keeps us pretty busy attond
ing to tho stock. Wo have horsos,cattle,
shoAp, goats all to attend to. We havo
little lambs capering around in tho snow.
Papa and brother went coyote hunting
tho other day; tho hounds can track
thorn bo nice in tho snow, they killod
ono largo coyote the day beforo they
wont out. Wo havo full blooded im
ported English fox hounds. Papa runs
deer with thorn and thoy cost nearly
$100 to got tho' old dogs out hevo from
"tho states. Papa sold dno pair of plips
to Mr. Stownrt and ho was ouf hunting
with thorn when thoy started a doer nnd
ran it till thoy got to tho const. Mr.
Stowart hoard of thorn in five or six days
and sent a man after thorn. But thoy
got somo salmon nnd dlod In n fow days
nftor ho got thorn homo. Wo nil felt so
sorry for him bocnuso ho thought so
