To hor it must bo gratify ing to know that there aro many differ ent ways in which this doliclous and economical fruit can po utilizod, both for dinner and toa. A dessert, eimplo and appetizing, is mado as follows : Brown Uotty. Lay in a pudding dish first a layer of finely sliced apples, sugared to taste, and dusted over with finely powdered cinnamon j noxt a layer of coarsely crumed broad, buttered at intervals. Allcrnato these layers until tho dish is full. Let the last layer con sist of applcd cut in eighths. Pour on Buillcicnt water to moisten tho whole. Cover and sot in tho ovon. When tho apples on top aro tondcr rcmovo tho covor and cook until brown. Servo hot without sauce. Applo FrittcrB aro easily prepared. Ono cup of Bitted Hour, ono teaspoon fill of good baking powder, ono pinch of salt, two eggs, ono cup of milk. Sift flour, salt and powder together, add tho eggs beaten, tho milk, ono-halt pint of chopped apples, and nutmeg to taste. Mix into n batter as for griddlo cakes and drop spoonfuls into lard mado hot for tho purpose. When a dolicato brown remove Sorvo with sugar. Tapioen Puddings. Two kinds of tapioca pudding, very delicious, aro thus mado. 1. Paro and coro sufllciont apples to fill tho pudding dish ; put into caoh a piece of lemon peel ; soak a half pint of tapioca in a quart of lukowarm water for ono hour, add alittlosnlt; flavor with lemon ; pour over tho apples ; bako until tho apples aro tendor; cat whon cold, with cream and sugar. 2. Fonr tablespoon fuU of tapioca soaked for two hours in tepid wator, whon tho tapioca has softened add a quart of cold water, pinch of salt, tablospoonful of molasses and two largo apples, corod and sliced ; place in a covered dish and bako in tho oven (or two hours, stirring occasionally; then remove tho cover, still ttirring. In half an hour tho pud ding should bo a deep brown. Pour in to another dish, and sorvo hot with hard b.'iUCu. Tliu Imrd eiiUCO in inadu by beating to a cream ono cup of sugar, ono heaping tcaspoouful of buttor and ono teacpoonfiil of boiling water, llavor with lemon or vanilla. A dainty dish for tea is mado by peel ing, coring and quartering apples, sugaring to tasto and adding sufficient water to keep them from burning. Place in a covered pudding-dish in tho oven and cook until tendor. When dono tho quarters should remain intact and float in a transparent syrup. Another excellent dish for tea is mado by peeling, coring and quartering ap ples, placing in a pudding-dish in lay crs, with Migar between ; pour on water enough to half fill the dish ; cover with an old plate and cook in moderate oven for three hours. If tbo fruit is not red by that timo return to tho oven and cook until it is. A third and appetizing way of cooking spples for tea is to peel and core thorn, lay in u shallow tin pan and fill tho holos with sugar. Pour into tho pan sufllciont water to koop tho fruit from burning. Cook until tho tops aro shriveled. Servo without milk or sugar. Choice Recipes. Stuffed' Potatoes. Bako largo pota toes until dono; cut a "cap" from tho top of oach ; scoop out tho insido carefully and mash softly with butter and milk. Minco tho giblots of your chickon fine, season with pepper and salt, stir into tho potatoes, add tho boatcn yolk of an ogg, boat in a saucepan until very hot, fill tho skins, roplaco tho tops and set in an ovon for throo minutes. To Mako a Tough Fowl Tendor. Tho Fronch havo a way of making a tough fowl tondcr in roasting which is worth following. It should bo seasoned and tied up securely in two thicknesses of soft whito or palo brown paper and put into tho ovon half an hour enrlior than tho timo would chooso to assuro to its boing dono. It will stenm slowly in this way, and if dolicatcly dredged with flour whon tho paper is takon off at tho end of tho half-hour in n hot oven, it will como out brown and easily carved. Batter and Fruit Pudding. Chop up ono pound of apples and put them in a greased pudding basin (goosobcrrios, plums or any other fruit will do), and sprinklo sugar over them ; now mako a batter of ono egg, six ounces flour and ono breakfast cupful of milk ; ono half a tcaspoonful of baking powder must bo added to tho Hour, whon tho batter is smooth, press it over tho fruit and steam gontly for ono hour; caro must bo taken that tho wator remains boiling and does not ovaporato too much.) Itod Cabbigo Pioklo. .V pioklo whic will keep a fow weeks, and which is very appotizing, and will help to snvo tho othor inoro cxpensivo pickles, is mado of rodcabbago. Chooso firm hoods, cut them into quarters, and after removing tho stalk cut tho cabbago across into very thin slices ; spread it upon largo platters, scattor salt with a liberal hand over it. Tho noxt day, drain through a colander. Thon put tho cabbago into a jar, and pour vinegar heated to n boil ing point ovor it, some wholo black pop por, and, if you chooso, a littlo cayenno pepper or curry powdor or ginger mny bo put into tho vinegar and bo heated with it. The Quality ot Butter. It is often remarked by writers on dairy subjects, says tho Amorican Dairy man, that tho oldor membors of tho fam ily on dairy farms aro much harder to nroiuo to a full approbation of tho nec essity for improvement in tho quality of tho butter made. This is duo to sov oral causes; ono is tho conservative na ture of tho older pooplo, who know tho dangor of abrupt changes in business affairs, whilo tho younger members aro naturally moro enthusiastic and ready to ninko now ventures and trials; but tho most important causo of tho old pcoplo's slowness in accepting tho now ideas is tho fact that nftor thoy mako tho now product and taste it thoy do not llko it. Such butter to their tasto is flat and in sipid. Thoy havo been brought up on strong food and violent smolls, and thoy hnvo learned to liko butter with n bono on it, and somo strength about it. Tasto is almost wholly a matter of cultivation, with perhaps somo eternally govorning rules about it, but surely no one has yet discovered them. This fact, however, suggests tho propriety of nllowing tho younger members of the family to decido tho question, not of tho goodness of tho goodness of tho butter product, for that is very properly a subject of everlasting dobate, but as to its adaptability to tho market. Tho farmer docs not caro whether or not tho butter suits his taste, if it will only soil, and for this reason ho should submit to tho judgment of tho best experts on tho farm, which will bo tho occasion of putting money in his pockets. School Is first, bnt all is not book learning tho boys must havo horses and Block, intuit havo an interest in farm matters, but tho girls need out door work too, and they havo tho gardon and flowors to caro for. It is not always sunshlno in Oregon, if wo don't havo any of those blizzards. Then money Is just as hard to get hero as it is in other places it is perhaps hnrder. This is not a manufao turing country and tho population is not largo considering tbo breadth of country. Well tho fact is that I don't havo timo as I walk two miles to Echool and by tho timo I walk homo at night am tired, and thon my sister and I havo to get supper and wash tho dishes nnd then I am too tired to write. "Wo havo not had much cold weather hero yet ; wo had ono awful blizzard about tho first of November, but wo havo not had much bad weather since then. I wag reading a letter in tho Faumer tbo othor day about raising chickens and planting garden. Oh, I should think it would bo colder out tbero than it is here, and it would do no good to plant a garden horo at this time of tho year It is too cold to plant garden or even raiso chickens in Ootobor. Papa talks of soil ing out and going to Oregon ; ho thinks ho can sell in tho Bpring. I would llko for Aunt Hetty to como out and mako us a visit.
