CHOICE RECIPES.
Dried Applo Cake. Two cupfuls of
Bwcot dried apples, soak over night nnd
chop ; two cupfuls of moirtBsos, nnd lot
it simmer over two hours; when cold
ndd ono enpful of sugar, two eggs, ono
hnU cupful ot sour crenm, sour milk
nnd butter, twojcaspoonfnls of sodn,
four cupfuls of flour, four tcnepoonfuls
of cinnamon, ono toaspoonful of cloves
nnd ono nutmeg.
Cream Oako. Four ogga; ono ton
cup sugar; ono tea-cup flour; ono
tablespoon swoot milk; two oven ten
spoons baking powder. Will mako
thrco layers. Cream. Ono-half cup
sugar; ono-quartcr cup of flour; ono
egg. Stir into ono-half pint of boiling
milk. Spread botweon tho layors whilo
warm.
Batter nnd Fruit Pudding. Chop np
ono pound of apples, nnd put them in a
grcasod pudding basin (goosoborrics,
plums or any other fruit will do), and
sprinklo sugar over thorn ; now mako a
batter of ono egg, six ounces flour nnd
ono broakfast-cupful milk; ono-half a
toaspoonful of baking powder must bo
added to tho flour ; whon tho batter is
smooth press it ovor tho fruit nnd stoam
gently for ono hour ; caro must bo taken
that tho wator romains boiling and
docs not ovaporato too much.
Browned Flour for Gravies. Alwnys
keep browned flour for gravies, nnd
eonps, ns in many cases thoy nro much
improved by it. To prepare this, simply
put n few spoonfuls in n pan, sot it in
tho stovo oven. It needs occasional
stirring or it will brown unovenly. Keep
it in a dredging box, ready for uso as
wanted.
Marblo Cako novcr fails. Ono cup
molasses ; two cups flour ; ono-half cup
butter; one-third of a cup of sweet
milk ; yolk of thrco eggs ; ono oven tea
spoon soda; cinnamon nnd clovos to
tasto.
Whito Part Ono-half cup sweet
milk j ono cup sugar; two cups flour;
whites of throo eggs ; one-half teaspoon
of soda; ono heaping teaspoon crenm
tartar. But tho cako in tho pan with a
spoon alternating tho dark and light,
and bako in a moderntoly hot oven.
Applo Dumplings. Sift ono qunit
flour, add half teaspoon salt, and lnrd
half tho sizo of an egg. Wot up with
cold water to a stiff dough. This dividn
into six or Bovon parts. Paro as many
good-sized app'os, cut through tho
middle, romoving thn enro ; cover with
the dough, pressing tho edges together
till no seam romains ; them when all nro
ready, roll two or threo times over in
dry flour, and drop into boiling water.
Boil steadily for half an hour, not onco
lifting tho lid till ready to remove to tho
tnblo. Eat with cream and sugar
sprinkled with grated nutmeg. Sirs.

Potato Salad. Mashed potatoes left
from dinner can be mado into a nico tea
dish by tho following niothod : Rub a
teacupful or two of tho potatoes through
a colander; mix with it half as mnch
finely chopped cabbage, a tablespoonful
chopped onion, and tho yolks of two
hard bailed eggo. Reservo the whites
for a garnish when tho dish h? done.
Mix-these ingredients thoroughly to
gether. For a dressing, take ono tablo
spoonful butter, ono raw egg well beaten,
one teaspoonfnl each of musUal and
flour ; wet with cold vinegar, and odd a
pinch each of salt and popper. "When
beaten smooth stir tnem into ball a tea-
spoonful scalding vinogar. It will mako
a creamy mixturo that whilo hot should
bo poured over tho salad. Set it in tho
refrigerator, or in nny cool plnco until
wanted. A littlo flnoly chopped parsloy
strowed ovor tho salad improves its ap
poarnncc, and somo of tho parsloy and
boiled whiles of tho eggs mako a tasteful
garnish.
Cream Cakes. Ono cup of boiling
water, ono-half cup buttor, ono cup
flour, throo eggs. Put tho wator on tho
stovo in n tin pan and when warm add
tho butter, and whon it boils stir in tho
flour. This will mako n Btiff pasto,
which may bo cooked by constantly
stirring for n fow minutes. When tho
pasto is cool add tho yolks of tho eggs,
woll beaten, tlion tho whites, nlso well
benton. Aftor ndding tho whites bent
very thoroughly, as tho puftlncss do
pends upon this part. Drop largo
spoonfuls on buttorcd pnpor nnd bnko
twonty minutes, nt least, in n modorato
oven.
For tho custard for filling: Ono nnd
ono-half cups of milk, ono-half cup of
sugar, ono egg, thrco tnblospoonfuls of
flour. Flavor with vanilln whon cold.
Put tho milk on to boil, beat tho egg
well, nnd add to it tho BUgar and flour,
nnd pour into tho milk whon it bolls.
Tho last thing is, when tho cakes nnd
custard nro cold, to tnko a sharp knifo
nnd cut tho tops off tho cakes nnd fill
tho cavity with custard, returning tho
top to its placo. If tho cakes nro right
thoy will bo but bubbles, nnd nro truly
delicious.
