Brown Botty. Lay in a pudding dish, first, a layer of finely-sliced applos, sugared to taste, and dusted over with powdered cinnamon; noxt, a layor of coarsely-crumbed bread, buttered at intervals. Alternate theso layers until tho dish is full. Let tho last layer con sist of apples cut in eights. Pour on sufficient water to moiston tho wholo. Cover and sot in tho oven. Wlion tho apples on top aro tender, rcmovo tho cover and cook until brown. Eorvo hot without sauco. Jollied Ohickon Boil a chicken tondor tako oil' skin, cat tho meat into small pieces, taking out tho bones ; skim all tho gronso oil' tho liquor jn a pot; mix n tablospoonful of corn starch with a llttlo wntor, rub smooth and lot it boil up good ; season with Bait nnd pepper. Boil eggs hard, pogl and slice, lining tho bottom and sides of a crook with them, thon pour into this tho prepared chicken, and sot in a cold placo to harden. Turn out whon cold. Top Corn Balis. Let tho children pop all tho corn thoy want. It is health ft.'1, if not eaten immodcratoly, Occa sionally mako pop corn balls for them. You havo only to mako a syrup ns for candy, and stick tho pot corn together with it. This rccipo for ''ttlo dumplings for stow requires sour cream or buttermilk. Half a pint of buttermilk or sour milk, half a pint of sour cream, ono tcaspoonful of soda in milk, two woll beaton oggs, a littlo salt, nnd flour enough, with which is sifted ono toaspoonful of cream of tartar, to mako a stiff battor. Drop tho batter by tho spoonful into boiling wntor, boil for twenty minutes until tho outside la dono, and put into tho dish with slow. Fresh Yogetnblcs Salted Down.- Sweet corn can bo salted down for winter ueo, in brino, and then immersing tho corn n it after it is cold ; a flat stono should bo used to koop tho corn undor tho brine, nnd beforo it i used it should bo freshened to a palntnblo uegrco by soak ihg in fresh water; tho brino should contain all tho salt it will absorb. As paragus, string-boans and egg-plant may bo similarly kopt in brino for winter use. Danish budding. Ono cup of pearl tapioca, ono pint of cold water, ono pint boiling water, ono half cup sugar, one-half teaspoonful of salt, ono cupful of currant or somo acid jelly ; soak tho tapioca in cold water over night; in tho morning put it into a doublo kettle with tho boiling water and cook an hour, or until transparent; stir often, add tho eugir, salt and jelly. Stir well and put into a m61d to cool. Sorvo with cream and sugar. How to Koep Cider Sweet. Pure Bweot cidor that is arrested in tho pro csss of fermentation beforo it becomes acetic acid or oven alcohol, and with carbonic acid worked out, is a most de lightful boverago. Tho following sci entific method of treating tho cider to preserve its sweetness is recommended : When tho saccharine matters, by fer mentation, aro being converted into alcohol, if a bent tube bo inserted, air tight into the bung, with the other end in a pail of water, to allow tho carbonic acid ovolvcd to pass off without admit ting any air into tho barrel, a bovorago will bo obtained that is a " fit nectar for tho gods." A handy way is to fill your cask nearly up to tho faucet, when tho ensk is rolled so that tho bung is down. Got a common rubber tubo nnd slip it over tho end of tho plug in tho faucet, with tho'other ond in tho pail. Then turn tho plug so that tho cidor can havo communication with tho pail. After tho water ceases to bubble bottlo or storo away. Danish Tuddlng. Ono cup of poarl tapiocu, one pint cold wntor, ono pint boiling water, ono half-cup tugar, ono half tcaspoonful salt, ano cupful currant or somo acid jelly. Soak tho tapioca In tho cold wntor ovor night ; in tho morning put it into a double kottlo with tho boiling water, and cook an hour, or until transparent; stir otton, add tho sugar, salt u id jelly. Stir wait and put into a mould to cool. Servo with cream and sugar. Goranium seed sprouts readily in tho tompcraturo of an ordinary sitting room. Sdw tho seed in February, and bl out tho seedlings tho latter part of May. Seedlings aro alwayB robust, and sometimes a roally good varioty is pro duced, to say nothing of tho economical way in which tho flower bod may bo filled. A paper of seed which you can get from mo for ten cents will produco as many plants, in careful hands, as ono could purchaso for aovoral dollars. Then, bosides, thcro is tho plcasuro of wising thorn yoursolf from Bccd. Verbenas can bo grown in tho samo way. Tho Bcods do not gcrminato so quickly rat geraniums somo will not havo oven started, whilo thcro will bo seedlings ready to transplant. If you havo pationco, in timo you will bo re warded with very thrifty plants and largo, fragrant flowers. To got suoli plants, it is of tho utmost importnnco'to sccuro good seed. Thoro is plenty of cheap seed at all times to bo had, but, liko many othor things, it proves to bo tho most costly in tho ond. 0. has a calla lily in a largo pot, in good soil, gets plenty of light, is old enough, but doos not bloom ; wants nd- vico.
