Th9 Valuablo Breeds of Cattle.
Mr. Itobcrt E. Turnbull, nt tho Derby
Knglfsh Dairy Conference, enumerating
tbo vurlotis nntivo breeds of British
cattle, namely, tho Short Horn, Long
JJorn, Jersey, Guernsey, Dovon, Hero
ford, Suffolk and Norfolk Polled, Sussex,
Aberdeen, Galloway, Ayrshire, West
Highland and Kerry, HtiUca Bomothiug
of tho valuo of tho bettor known of
these breeds thnt hnvo coino under his
notice. Ho says :
"Tho West Highland, with its wealth
of hair, iron constitution and lovo of
freedom is woll adapted for iU nativo
health.
"Tho Ayrshire is chiefly brod in tho
west of Scotland. Tho cows URtially
cigh from 7G0 to 1,000 pounds. Tho
milk is better adapted for chccno than
for butter, not only bocauso it is rich in
cascinc, but beeauso (ho cream globules
do not readily riso to tho surfneo of tho
milk. Tho skim milk is unusually rich,
and calves, therefore, thrivo well upon it.
Tho Ayrshire is a very aclivo littlo cow,
and is well adapted, not only for tho
green hillu of West Scotlald, but also
for tho second rato grass lands of Eng
land. As u milk producor in a hill
country, tho Ayrshire ih second to none.
"Tho OuoniBoy and Jersey breeds
have a wonderful capauity for converting
grass into butler, and under favorablo
circumstances tho best cows will pro
duce nH many poundH of butter in n
week as they give quarts of milk at a
meal. They require to bo iMHturcd in
good, dry, well-Hholtered fields, and to
bo houijod oarly in tho autumn.
"Tho littlo Kerry is n most useful
breed, woighing about 700 pounds when
in Htoro condition. It Is cssoutially tho
poor man's cow, for not only can it bo
bought for ii very Hiiuill price, but it
can yield milk and gathor llesh whore a
Short Horn or n Jersey would htarvo. It
does not yiold a largo quantity of milk
at a incnl, but it begins by yielding a
fair quantity, and it kindly treated and
if itH wanlH are attended to, it will milk
on stoadily for a long (wriod, and when
finally fattened oil' it will usually fetch
inoro than it cost when brought over
from Ireland. It should bo served by a
yearling Short Horn or by an Aldemy
bull when a Kerry is not available. A
good Kerry cow will yield about 120
trillions of milk in the year, and about
one K)iiii(l of butter from ten quarts of
milk."
The long horn bleed dcHorvoa to be
better known. No dairy cattle wear
taller. They are groat clieefo pro
ilucora, and nro remarkably freo from
tho ills to which most cattle lire liable.
Excellent dairy cows nro to be found
of tho Aberdeen, Galloway and Here
ford breeds ; but, an a rule, more atten
tion him been paid by tho brewlorH of
thoHo cattle to the production of beef
than to the production of milk.
Among tho breeds not upokeu of for
milk tho Norfolk and HuH'olk pollH, the
Devoim and their near relation, Sussex,
are well known for their good milking
qualities and in producing beef of best
quality. The Short Horns also are con
sidered in Ihigland as among the mot
valuable of tho native breeds as milkers
fur better as a rule than the llcrefords.
Hut this excellence is coiiIIiiihI to par
ticular families, iih is tho case in this
country; and hoio tho beef-producing
characteristics have, us in the Hereford,
been cbiclly nought. In tho United
States, in addition to the more valuable
of tbo ItritiHli baM'ds, wo have tho Hoi-
in-Fiiwiiui and tho Swiss cows. Thcco
me among tho most noted of tho breeds
of tho world for milk.
With us catllo have now coiiih to be
kept dictinctly for u specific purpose.
In the great dairy districts Hast the
Jersey and the (Juernsey fairly compete
with tho Ayrshire and Holstein. In the
Went tho two latter breeda are found in
larger numbers. In tho hill country of
the South the Jersey and the Devon
are considered tho most prolltablo. It
is more a question of food, perhaps,
than climate, for wherever pastured are
Hush tho HoUteius and the Ayrshires
predominate for milk, and the Holsteins
very much inoro largely than the Ayr
shires. They without doubt constitute
tho best cowa for butter and choose in
tho world, and whon dry they take on
llesh with tho best. Where butter alone
is tho object tho Jersey and tho Guern
sey have no equals, but with the inclina
tion lying decidedly in favor of tho
Guernsey on tho flush pastures of tho
West. In tho United Stutes, therefore,
where all breeds have boon tried, public
favor has settled on tho Jersey and
Guernsey, ami tho Holstein and Ayr
shire for tho dairy, locality having much
to do with tho choice. Where cattlo
for mixed uses are sought, tho Short
Horn, tho Sussex, tho Devon, and
among polled cattlo tho Galloway and
tho Bed Pollsnroavored, and probably
in tho order named.
Coming to cattlo for beef, Short Horns
and those grades largoly predominate.
Next to thefo are tho Hcrefords, not in
any degree second to tho Short Horns
for bcof. Their grazing qualities nro
confessedly superior, while it is just
possiblo tho Short Horns may excel in
early maturity. Polled Angus and
Abcrdeon will probably givo tho best
llesh of any of tho improved breeds
common in tho United States, except
possibly tho Dovons.
Tho pollod hords, howevor, arc not
common enough, so that tho public
hnvo not a clmnco to judgo for them
selves. Short Horn grades undoubtedly
constituto a larger proportion of tho
bcof of improved breeds found in our
markets than all tho others put together.
Yot tho mixed cattlo of tho country far
outnumber all tho improvod broods, and
will for many years yot to come.
Cattlo Buying In Early Days.
Tho early history of this State, as to
pioneers, Indian fightors, etc., has been
protty well written up, but thero is a
class who havo not yet given their ex
porienco to tho world. It is the cattlo
drovors, who rodo and raced over tho
country and became intimatoly ac
quainted with mostof tho early settlers,
and who experienced somo strange and
startling ndventurej. A knot of .theso
old-tlmors waa gathored In A. H. John
son's otllco the other day, spinning
yarns alwut their trip awny hack in
tho ViO'h, whore tho only sourco of sup-
I ply of cattlo for this market wore Yam
hill, Polk and Benton countio-, and tho
cattlo were tho wild, untamed, big
horned breed. Drovors would start out
from this city, cross over the Chohaloin
mountains into the cattle ranges, with
their pockots full of JfoO slugs to buy
cattle. Thoy would reach somo farmer's
place, wet and hungry, their horses
tired out, and ask tho fanner, who
would bo found Hitting by the fire, if ho
had any cattlo for sale. ''Yes," was tho
reply, "there's noino out on tho hills."
"Will you show them tons?" "No; I
'aiiit got any horse. Yon can go up on
the hills and look at thorn. My brand
is a cress and my mink a half cross and
a slit on tho left ear." So tho drovers
would race around and "round In" a
doon head, as many as thrco or four
men could drive of such stock; get
thoin down to tho ranch, pay $00 to $70
a head for them, and then order dinner.
This consisted, in almost every case, of
somo scraps of bacon Moating in its own
fat, somo saloratus bread, and chopped
hay tea. Thoro was ono place where
they used to get pickled spare ribs and
pea collco and biscuit, and this spot is
still green in tho memory of tho drovors.
To get tho wild cattlo away from
their ranges was a hard job, nud tho
drovers could novor feel easy till they
had them ten miles on tho rond. The
farmer would pocket his slugs and go
back to his llrcsido and lcavo tho drovers
to wrostlo with tho untamed steers.
"Once," said ono of tho party, "I got to
the Chehalem mountains with a baud
of steers. There was alvout a foot of
snow on tho ground uud no track
broken. Wo got tho cattlo to tho top of
the mountains and thoy would go no
further. They broke into tho brush in
all directions, and wore all on the tight.
So wo hud to go back to a farm ami
stay all night. Ono of tho boys got a
bottle of whisky there, and we started
out again in the morning. Wo man
aged to get the cattle together, except
une, who would not budge. Wo tried
every way to start him, and at last Mat
got mad and hurled his bottle of whisky
at him, striking him in the forehead,
and falling unbroken into tho snow.
The steer did not move, and Mat said ho
was bound to have that lottlo of whisky
somehow. So ho got tho rest of us to
ride in front of tho steer and engross
his attention. Then Mat went a piece
behind the brute and put his horse into
a run, and as ho passed the steer ho
reached down, caught its tail, and gave
it a twist around the horn of tho saddlo
and threw tho steer end over end, upon
which it trotted ofl' after its companions,
and Mat picked up his bottle of whisky,
and wo started again for Portland."
