Itc Dfjonic ifffirtU. una HAunioT t. clauke, editok THE CHOICE. It would all bo very well, If your yelly'd always "joll," If your cako ws always nice ami white, If your bread would only bo Just like mother's which you se. With the eyes of memory always light. If each bit of gUsi and dclf Had it's place upon the shelf, And was always olean in order standing there. If no particlo of dust, Blot of Ink, or speck of rust, Ever marred your household chatttes any where. If, when you feel inclined To oultlvate jour mind, And sit down with ft fnper or a book, Your husband wouldn't come, Tired and hungry, to his homo, And aik, "la supper roady!" with a most as tonished look. Or if it seems to you The proper thing to do, To go and paint a pansy, or perhapi a four leaf clover, Or a stork and clump of reeds, When your room adornment needs, Tho soup would simmer gently, and not think of boiling over. If, when youVo learned a stitch, In artistio beauty ricji, -And aro crazy jutt to try it on tho quilt you havo begun, DIrty-Faco would not c.mo In, With his mott chcrublo win, .And with rents in his small trousors more than ono. If tho city con. ins wouldn't Visit you just when they shouldn't, Nor tho minister como calling, washing day, If vacation ever came, And your life held not tho samo Weary, ccitclcis round of labor till your hair turns gray. Hut since these things aro so, And tho household wheels won't go, If they nils for but an hour your gliding hand If a work that you can do. In tho great wotld waits for you, You must chooio between tho two Work and Home you understand. Qivo mo back my books again, And my ruler and my pen, Open wldo for mo tho school-room door, Call tho children round mo there, And, despito its toil and carr, I would chooso a teacher's lifo forover more. Potatoes, Napatoes or Spuds. rotntocs nro potatoes tliia year poor in qurtlity nnd few in quantity. Ono yoaB subscription to tho FAiuicit senrcoly filled n good-sized barrel, nnd when tho rotten ones wcro picked out, they wcro beautifully less. But it's not to complain of this that wo writo, for a box from tho grocery was infected, too ; it is only to iuquiro if wo nro to havo tho potato rot in Oregon now. Wo havo always raisod fino potatoes in this country, but for tho Inst yenr wo have not had ono real good potato ono that could bo boiled with jacket on, nnd open moldy and whito; thoy nro watery, tnstoloss affairs. It may bo that our potntoes wcro not grown on sandy soil. Jinny complaints nro heard of short crops, somo of tho seed rotting in tho ground, nnd no crops at all. Diseased potatoes aro a common thing East. Thoy nro n luxury in somo States, for tho potato bug has to bo fought all summor long, bo that botweon that nnd tho bugs, few nro finally dug. Tho timo will soon bo at hand for po tnto planting, nnd nny nrticlo upon tho subject of potato culturo will bo wel come. Is it safo to plant potaroes from an infected crop? ovon if tho tubor ap pears to bo perfect? Which ond of tho potato will produco tho beat cropT "What timo is host for planting? Wo onco knew n gentleman famous for his suc cess in raising good potatoes, ns well as other crops ; ho always plantod in tho dark of tho moon. Wlicthor it bo this or not, ho certainly lost nothing by fol lowing this old-fashioned rulo. There nro observing peoplo among tho friends of tho F.iitMKii who ought to bo ablo to say something about tho potuto culturo which is so necessary for our table. Let us sco if thero aro not somo varietios which aro free from disease. Those which wo have noticed to bo bad seemed to bo of tho Burbank variety. We hope to get somebody's experience before long. After Many Days. A person who has tho happy faculty of observing little things, was ono day last summer away up at, or near, Tun nel City, tho present terminus of tho Cascade branch. At this placo ono would scarce expect to find plants of civilized life ; yet hero was that modest, useful catnip, with pungent odor to attest its identity. Plantain, too that Bohemian of civilized posts, was Ihere. WtixiMETTfi FARMER: SALEM, OREGON, There aro certain plants that suroly follow civilization thoy novor preccdo man. So, finding theso did scorn n mar vol, till Copt, Biles cxplaiuod. It wns about 1852 that Cant. Biles, then n young survoyor, accompanied Georgo B. McClelland on nn expedition to survoy tho first routo for tho U. P. R. It. This lnrco company required considerable fornco for tho pack ani mals, and in this way seeds wcro scat tered; somo falling on good ground, crow, nnd it is no lonjrer a mvstory how that catnip camo to bo in tho moun tains of Washington Territory. What a Woman Old. Fiftcon yoars ago Jonnio Collins wns a tnilorcBS in Boston, working for her dnily bread. Feeling keenly depriva tions nnd misory of tho largo class of shop girls who livo in boarding houses and lodging rooms, nnd who havo no frionds in timo of sickness nnd trouble, alio nppcnlod to her employer, a humnno man, for assistance in establishing a headquarters for them, whero thoy could congregnto for social purposes and self holp. Ho did for hor moro than alio asked, nnd "Boffin's Bower'1 was estab lished, which is now in tho sixteenth year of its oxistoncc. It hns exercised tnarvolous inllucnco for good over tlioso who wcro ready to perish. During tho lifotimo of Wendell Phil lips, whenover Jonnio Collins failed to obtain means clsowhero, alio went to him, who was ovorybody's helper. Hon. William I. Bowditch of Boston, tho administrator of tho Wondoll Phil lips estate, bus shown mo n littlo book with loathcr hack and Comoro, in which "Ann nnd Wendell Phillips" rccordod tho monoy thoy gavo nwny. Tho grand total, inclusivo of largo and small sums, from 181C to 1875, was $01,710, And yet noithcr of thorn was woalthy in tho modern nccoptatiou of tho word. Tho Ohnutauquan. Table Manners. A part of tnblo mnnnors should bo tho conversation. By mutual consent ovcry ono should bring only tho best that is in him to tho tnblo. Thero should bo tho groatcst caro takon in tho family circlo to talk of only agrccablo topics at mcnl8. Tho mutual forbenr anco which prompts tho neat dress, tho respectful bearing, tho dolicnto habit of eating, tho attontion to tnblo etiquctto, should nlso mako tho mind put on its host dross, and tho effort of nny ono at a meal should bo to mako himself or herself as agrccablo ns possible No ono should show nny hnsto in being helped, nny displcnsuro at boing left un til tho last. It is always proper nt nn informal meal to ask for n second cut; to any that raro or undono bcof is moro to your tasto than tho moro cooked por tions ; to ask for another cup of ten or cofico. But ono novcr asks twico for soup or fish ; ono is rarely helped twico at dosscrt. Theso dishes, also salmi, nro supposed to ndmitof but ono helping. ChllCren Earning Money. Children cannot bogin too young to earn monoy. If it is only a. littlo ono egg for ovnry do.en thoy find, pay for carrying tho milk, a fow conts per week for washing dishes, or bringing in tho wood or coal or kindlings ; so much for ovcry towel they hemj or thoy may keop hens of thoir own, or a pig, or caro for their owrl calf along with tho othor cattle how much moro intorcst they will takol Thoro aro an infinito number of ways in whioh a child can earn monoy, nnd that, too, without pay ing him for his littlo kindness for tho homo people, eithor; nnd thon ho ban nn almost inexpressible feeling of prido and indepondenco when ho buys some thing with his own earnings. Thoro is no better Bcrvant in tho world than this samo monoy ; but to bo of tho most uso it must bo rightly managed, and only oxperionco can teach that lesson prop erly. Ex. CHOICE RECIPES. Bechnmol'B whito sauco was mado by adding n tnblespoonful of flour to two ounces of butter, gradually adding a pint of milk. Siir it continually over tho flro, and removo ns it thickens; boat tho yolk of ono ogg with a tenspoonful of wator; stir into tho sauco and season with salt and whito pepper. A littlo petroleum added to tho wator with which waxed or polished floors aro washed adds to their looks. In using cloves for pickles or pre serves tho blossom end should be re moved, as this darkens tho liquid with which it ie cooked. Pretty littlo pincushions for tho pocket aro mado of volvct in tho form of pan eies. Tho lines of tho flower arc worked with etching silk. If roses are lilted before they can be plnccd in wator, immerso tho onds of tho stnlks in vory hot water for n min uto or two, nnd thoy will regain their pristino freshness. Flowers of sulphur sprinkled on n hot oliovol, nnd tho fumes inhaled whilo thoy aro fresh, will euro n cold in tho head. A teaspoouful of sulphur is suf ficient, nnd docs not causo disagreeable sensations. Uold cauliflower makes a palatablo salad. Boll It half nn hour in salted water and let it drain until perfectly dry When cold break it in piecos nnd flr rnngo it, stnlks downward, in n salad dish ; cover It with a mayonnaiso sauco and serve. A slmplo chlckon pio may havo its foundation a fowl that has been partly consumed. Minco tho chickon very fino nnd covor tho bottom of n buttered baking dish with part of it ; cut tho liver in thin slices and lay over it. Put tho rest of tho minced chicken in tho dish, seasoning with salt and peppor, adding onough gravy, mado from tho bones, to moisten. Covor with plain pastry nnd bako a dclicnto brown. This dish of apples is nico for lun cheon : Peel and coro twclvo apples ; put thorn in n baking pan and fill tho cavities with sugar. Pour water over them so that it will bo about half an inch deep in tho dish. Bako in n good oven. Mako nn omelet of four eggs and four tablespoon f tils of milk, and when tho apples aro dono pour it over them. Return to tho ovon and bako ton min utes. Encli of our young folks, wo hope, will try nnd keep tho day. Thoro is not ono of you all but can follow tho spirit of tho day if you will. Custom Inn mado Christmas day ono of gladness each to mako tho other hnppy; tho giving of gifts is universal ; just as tho wiso mon who enmo to tho mother of Christ with gifts to show thoir gladness, bo wo to day glvo to thorn wo host lovo something wo value, with tho wish of making thorn happy. It is not necessary that n gift bo costly ; it is moro that wo fool that wo aro romomborcd, that somo ono thought of us, that makos a present precious to us. So, dear girls, try and think of boiuo littlo thing to glvo those you lovo. Thoro nro ninny useful art! clos that littlo girls can mako. Now, just think if thoro is not somo littlo thing to mako for mother, who would bo so happy to bo romembored in tho least way. A pin cushion is always nlco, nnd it mny bo mado easily nnd stuffed with bran. Two or thrco aro not too many to havo in a houso. A cushion for mother's rocking-chair could bo mado in socrct, nnd alio novor know it. Keep tho chickcn-fcnthors to put in. Then, how many mothers havo a real good ironing-holder? Ono mado good and thick, with a top to hang it up by, would bo so handy. A nlco big kitchen apron, with n pocket in it, is always nccoptnblo; or initko u "catch-all" by putting pockets on n stout picco of cloth somo big pockets for shoes, etc., littlo pockets for strings, soft rags, otc, thon tnck this nt tho four cornors insido of tho closet door, and just soo how handy to find, in a hurry, a cloth for tho cut finger, n string to tio it up, and papers to wrap things in. Knit papa somo mittens or socks. Wo do not sco littlo girls knitting ovory evening ns wo used to do ; it's n grcnt pity children aro so idlo now-a-duys "Satan finds somo mischief ctlll for idlo haudj to do." Did parents only rcalizo it that children nro hnppier to bo busy but blind pur- cuts do not soo it so. Ellu is interested in chickon?, nnd it is tho that ought to tako caro of tho poultry, though alio says mamma raises them. Wo nro glad to get Kiln's lottors. Sho must toll us if alio mado u nlco lit tlo work-bag for her mother's Chrlstmns gift. It is quito In stylo now to carry a bag, and wo find nn old-fashioned black silk ono very convenient. Wo had it last Christmas. Nellio comes out with a good letter, too, with a riddlo for somo to guess. Now perhaps Nellio will try to mako her mamma a good, largo stookingbng for Chrlstmns ono that will hold all tho stockings to bo darned, with anothor sido-pockct in it to keep tho balls of yarn and darning noodles. It's so nico to havo ono placo for stockings ns thoy como from tho wash ; then when mam ma gets timo to inoiui, thero thoy nro, nil together needles, yarn and all. Jumi'J-ii, On., Nov. 28, 1880.
