Lemon LUoringno Pudding. One quart of milk, two cups of breadcrumbs, four eggs, ono-half cup butter, ono cup of whito sugnr, ono largo lemon, juice, and hnlf tho rind grntodj soak tho broad in tho milk ; add tho beaten yolks with tho butter and rubbed to n cream, and also tho lemon. Bnko in a buttered ' dish until linn and slightly brown. Draw to tho door of tho oven and cover with a meringuo of whites whipped to a froth, with three tablespoonfuls of pow dered sugar and a littlo lemon juice. Uronn very slightly; sift powdered sugar over it and cnt cold. You may mako an nrango pudding in tho snmo way. Gingor Dread Without Kggs. Mix one tenspoonful butter with hnlf a cup of sugar nud stir in two-thirds of a cup of niolnss and hnlf a cup of tour milk. If you havo no sour milk add a dosert spoonful of vinegar to a cup of swoet milk. To this mixture add half a tea spoonful of cinnamon, a small table spoonful of ginger, hnlf a teaspoon fnl of sodn dissolved in a littlo wnter nnd enough sifted Hour to mako a rather stiff batter; then add half n cup of currants or seeded and chopped raisins. Bnko in a deep pan. A Drenm Cake. Mako n rich battor und bnko it in threo layers. Tho layers, should bo hosted with confectioner's sugar and tho whito of eggs. Tho frost ing of tho first layer should bo flavored with lemon, for tho noxt layer with va nilla, and tho top layer should be fla vorod with a few drop of rose water nnd thickly covered with coaconut. Crumbed Eggs. Cut six hnrd boiled eggs into slicos, dip into melted butter, then into tho cracker crumbs, nnd fry in grood dripping. Spread triangles of fried bread with anchovy paste, lay them on a hot platter and arrange tho eggs on theso; pour over nil a cupful of drawn butter, into which a raw egg has been stirred. Tlnin Short Cake. Ono quart flour loosely measured, one sahspoonful salt, and two heaping teaspoonfuls baking powder; mix while dry. Add one-quar ter pound butter and ons-eighth pound lard, nnd enough cold water to mako a thick paste. Roll out half an inch thick or less, nnd cut into squares ; prick with' a fork, and bake immediately. Wti,jUiUviETT FAHMEK: SALEM, OREGON, Two Minute Cake. After standing in tho oven ono or two minutes, sprinklo over with fino granulated sugar, which makes n nico frosting wichout extra trouble.
