Half a cup of rice and tho Bamo of pearl tapioca, half a cup of sugar, a quart of milk, a half-teaspoon-f al ol sol , ; 80ik rico and tapioca well, mixed together while dry in threo cups of water four hours ; salt tho milk, drop ping in a tiny bit of soda, pour upon tho cooked cereals nJ lot them 6tand to gether half an hour; set over tho firo in n farinn kottlo and simmer slowly ono hour; fill small cups with tho mixture while hct and when cold put on ice. Tho cli unto is good nnd never too warm to mako butter without ico. Klickitat county, southern part of tho Territory, is favored with a good climnto for dairying. Cows aro fod only threo months, and aro sheltered during cold rain storms. Lewis county, southwestern part of tho Territory, is largoly comioscd of ro- claimod swamp land, well ditched nnd set with timothy, red-top, English ryo, nnd orchard grasses; red, white, and nlsiko clovers. Theso form tho hct of pasturago in tho driest seasons. Tho cows aro fod an nbundnnco of good hay, and, nfter cheese-making, thoy aro fed upon sheaf-oats and liny, to keep them in good condition. Pacific county, southwestern part of tho Territory, reports dairying on tho decline, owing to low prices. It is stated that "tho uniformity of climnto make a uniformity of pasturos. Situated noar tho ocean, thcro is a natural grass coun try, aud is unexcelled for dairying." San Juan county, northwestern part of tho Territory, i3 considered to possess a climate favornblo to tho manufacture of butter. Tho pasturago is good, al though wa lor h scarce. Whntcom county, northwestern part of tho Territoiy, has no buttor orchecso factory, notwithstanding tho great adapt nbilty of soil and climnto for dnirying.
