A Curious Exhibit
Tho Pacific Rural Press gives a
lenghthy description of a fanciful exhibit
of somo ambitious dry goods firm at tho
lato Stato Fair at Saoramonto. This dry
goods firm erected a castlo, 2(J by 30
feet, and 15 feet high. Tho framo was
of lumbor, but so designed that it was
apparently of goods in bulk ; tho illu
sion was perfect; thsro worotowow, bat
tlements and portals for entrances. Tho
battlements of woolon cloths, muslins,
quilts, towelings and sheetings in bolts j
a huge chimnoy was composod of flan
nol, pointed with whito tape; a hugo
iiro placo was decorated with napkins,
in colors; suits of armor abound, and
weapons woro in tho room called tho
armory. Heavy masonry was repre
sented by dark gray cloth, lined off by
whito braid altogether it was a most
wonderful exhibit of architecture nnd
illusion. There was an art gallery, a
music room too, rooms in which people
could sit and lounge. Except tho floors
and rough framo everything was con
structed of dry goods. It is hardly pos
siblo to k'ivo a correct idoa of tho thing
in our limited space, but it was too in
genious an affair to omit altogether.

CHOICE RECIPES.
Brown Bread. Four cups cornmcal,
0110 cup flour, tlirco cups sweet milk,
ono cup sour milk, two tablespoon fills
very small ones each of salt nnd
soda, ono cup molassos. Steam thrco
hours in buttered mould.
Breakfast Dish. Stalo broad crumbs
softened in swoot milk, seasoned with a
littlo salt, peppor, bit of butter, and a
dust of powdcrod sage, or oven n hint of
onion if liked, mado into littlo cakes
and browned in hot fat. A beaten egg
added is an improvement, or tho cro
quctlcs may bo dipped in beaten egg
before browning.
Baked Onions. Pcol largo oniotiB,
and boil ono hour in plenty of wator,
slightly salted. Butter a shallow dish
or deep plato nnd arrango tho onions in
it, Sprinklo with pepper and salt, put
a tcaspoonful of butter in tho center of
each onion, and cover Blightly with
crumbs. Bako slowly for ono hour.
Servo with croam snucc.
Greon Tomato Picklos. Thrco pounds
dark brown sugar, eovon pounds of to
matoes, ono pint of good vinegar, ono
tablcspoonful allspico, cloves and china
mon. Boil tho vinegar, sugar and spices
togcthor for twonty minutes, put in tho
tomatoes, which have been sliced, salted
and drained, and boil until soft. Put in
a stono jar.
Chow-chow. Ono pock green toma-
toos, ono quart small whito onions, chop
together very fino, then ndd two qunrts
viuogar, ono pound sugar, ono tablc
spoonful each of ginger, cloves, nllspico
nnd mustard ; uso only ground spices ;
two tablcspoonfuls salt; boil togcthor
till very thick, which takes about four
hours, as it must bo boiled slowly.
Grape Mnrmnlado. Pick over nnd
stem ripe, woll flavored grapes. Cook
over n steady fire half an hour nf tor they
havo como to a boil. Dip out most of
tho juico, and rub tho grapes through a
colander. Itcturn to tho iiro and ndd
sugar in tho proportion of pound for
pound unless tho grapos nro exception
ally sweet. In this caso thrcoquartcrs
of a pound of sugar to each ono of fruit
may bo used. Boil half an hour longer
and put up' in air-tight glass jars or
tumblers.
Cream Puffs. Ono pint boiling water ;
whilo boiling stir in ono cupful of but'
tor, two heaping cups of flour and eight
eges, yolks and whites beaten separate
ly. Stir until woll mixed, then tako off
tho firo. Whon cool, stir in ono toa'
spoonful of soda. Now drop in gem pans
and bako in hot oven. Cream : Ono
quart of boiling milk, mix togothcr four
tnblospoonfuls of cornstarch, fivo table-
spoonfuls of sugar and four eggs, pour
into tho milk, stirring constantly. Cut
tho pull's in half nnd fill with tho cream
Ono-Egg Cnko. A very simplo enko
rcclpo quickly mndo for tea, which wo
liko to cnt warm. Ono tencupful each
of sugar and cream, 1 ogg, 21 teacup
fuls flour, 2 tcaspoonfuls baking powder,
a pinch of salt. Flavor with nutmeg or
lemon, beat thoroughly, and at onco put
it in a buttered cnko pan and bako iu n
moderately hot oven. This also makes
n good layer cnko. If ono has not
cream, tako ' cup of sweet milk and
butter tho sizo of an egg.
Frosting without Eggs. Mix ono cup
of sugar with ono-fourth of a cup of
sweet milk, put over a slow firo, stir until
it boils; thon boil fivo minutes without
stirr.ing; sot tho saucepan in cold water
whilo you stir it to a cream. Spread on
tho cako whilo it will run. It will keep

will not crumblo whon you cut it.
Suet Pudding. Ono cup suet, chonned
fino ; ono cup raisins, ono cup zante cur
rantri, 0110 small cup black molasses, ono
tablespoon soda, ono cup sweet milk,
ono teaspoon cinuamon, ono teaspoon
ground cloves, a littlo salt, throo cups
flour. Steam four hours, or until you
can run a broom strnw into it without
any of tho dough sticking to it.

for tho Bancroft series, and $2.50 for tho

saving to tho people of tho State, if the

Whilo traveling on tho cars not long
ago, nway in Eastern Oregon, wo hap
pened to sit by a lady from Ilia. Wo
hnd a very pleasant visit together, nnd
got out of tho cars, togcthor with othor
travelers, to visit Multnomah falls,
whero fifteen minutes aro allowed,
which was timo enough for tho swift
footed and young to rush up to tho
stoop mountain sido nnd cross tho rustic
bridge, which is closo by tho road whero
tho down coming water dashes into
foam boforo it finally reachoe tho bed of
tho creek. This fall of wator is very
beautiful ir summor, but is oven more
wiord and beautiful in winter, when
the very sprny is frozen into fantastical
shapes. Eastern tourists rush out to
gazo upward, and many of them any
that fnmous plnccs iu Europo aro
eclipsed by our mountain sconcry. But
to return. Wo told our friend thht it
Bccmcd as if Ilin was a familiar name.
It soon brought to mind ono of our
graceful correspondents, and wo woro
glad to find thnt our now acquaintance
know almost all our young friends on
Snnko river. Wo hopo somo timo to find
it possiblo to got up thoro. Frequent
trips to tho laud of sago-brush has given
us n liking to tho country, whilo all
othors who havo onco lived in thnt
climate with to go back again. While
tho ico was an inch thick on a pail of
water left out doors up there, still wo
did not feel cold until Portland was
reached. Tho dry utmosphcre iu tho
upper country during tho winter months
is favorable to raising stock.
A good letter from May comes, just
whilo wo woro thinking about her. Wo
shall havo to writo to her and tell how
it camo that it should bo bo. Wo nro u

Only yestordny we, liko old "Aunt Cloe,"

ago, and which wo thought had lecn

think they aro not a distinct breed
only n "sport." Wo onco sot a dozen
puro Blnck Spanish cggt, and two ot
thoso oggs brought porfoctly whilo
fowls ono hen nnd ono rooster. Thoy
had every characteristic of tho Spanish,
but that hen often hatched blnck chicks.
Wo think thcro is no fowl so good for
eggs as tho Spnnish, yet as for table mo
wo havo no doubt but that u big black
crnnu would taste as woll.
May sets a good oxamplo to our girls
of tho Homo Circlo by getting breakfast
for tho dear mothor who has sacrificed
to much for her. Smilax cannot visit

also read them. Aunt Hetty, I saw a
piece in tho Fakmeii that you wrote
about your nieces and I liked it roal
well. I think it is nico to help my
mother in every way I can, bocauso sho
took lots of pains with us when raising
us from babyhood to young ladies and
wo now ought to tako all tho work off
from their hands that we can. I gener
ally got up and cook breakfast and let
