CHOICE RECIPES
Cold Meat Dish. Tnko niiy soit of
cold ment nnd auot, mixed; chop very
lino; add salt, onions, minced 1mm or
tongue, n slice of bread ; soaked in milk,
two woll-benteu eggs, ono otinco of but
ter; stow nil together for ilfteon min
utes; turn it into n mould nnd bnko till
brown. Turn out on it hot dish and
cover with tho gmvy Htrnincd oil' when
moulded.
Boiled Hico Pudding. Sonic it coll'eo
cup rico iu cold water ono hour; drain
it well and spread it on a ntrong cloth.
Peel ami quarter u fow tart apples, and
plnco in tho center, gather up the cloth
atid tio rathor closo ; put into a kcttlo
of cold water, with a tablespoon suit to
four quarts water; heat gradually, and
boll ono hour. I sometimes uho raisins
instead of' npplos, but leave more room
to swoli.
Potato Salad. Slico half a dozen
largo cold boiled potatoes, put into a
salad dish, and season as follows : Two
tablespoons best salad oil, half teaspoon
Biigar, samo of salt, popper nnd mado
mustard, and about tho samo of royal
celery salt. Bub to a smooth pasto and
whip in a toaspoonful nt a time, flvo
tablespoons best vinegar; when well
mixed pour upon salad and servo.
Wliito Mountain Cake. Mix woll to
gothcr oim cup of butter with tlireo of
sugar. Thou add half a cup of swcot
milk with u toaspoonful of cream tartar
in it, nnd tho whites of ton cgir-i beaten
very still' Lastly add threo and a half
cups of tlour with half a teaspoon of
oda in it. Flavor with csonro of lem
on and bako in thrc Hat cakes. For
icing tako ono pound of pulverized su
gar and tho whites of Ihtvueggs. Flavor
with vanilla, nnd put between tho lay
ers and over tho top and sides of tho
cako.
Cocoanut Cake. Two eggs, ono cup
ofwhito sugar, half a cup of sweot
milk, quartor of a cup of butter, ono
and ono-half cups of Hour, one and one
half teaspooafnl of baking powder.
Hake in a moderato. oven In pans ono
inch deep. To proparo tho dosicatod
cocoanut, beat tho whites of two eggs
to .i cliff fioth ; add ono cup of pulvor
izod sugar and tho cocoanut, aftor soak
ing it in trailing mill;. Spread tho mix
ture between tho lajerHof tho cako and
over tho top.
Oatmeal liruoi. Tako two ouncos of
oat meal and and one and one-half pints
of water. Hub tho meal in a basin with
tho back of a spoon, in a small quantity
of water, pouring oft' tho Jluid after tho
coarser particles aro sottled, but whilo
tho tnilkncsacoutinuos ropoat tho oper
ation until tho milkness disappears.
Xcxt put tho washings into a pan, stir
until they boil, and a soft thick mucil
age is formed. Swcetcd to taste.
Itibbon Cake. Stir together until
very light, half a pound of fresh butter,
and tho same of powered sugar. Heat
twelve eggs very light and stir them in
to tho eggs and butter alternately with
n pound of sifted flour. Bako on a tin
or iron plato as you would buckwheat
cako?, taking caro to havo all tho si.o of
tho tin and u good shape. Sproad lemon
butter between each layer, and sprinkle
powdered sugar ovor tho top.
Applo Dossort. Paro and coro largo,
sweet apples and fill with butter nnd
sugar. Set each on a round pieco of
stale, crustless bread. Put a littlo wator
in tho pan, sprinkle sugar over all, and
bako till done. Carefully reraovo to the
serving dish and cover with an icing
mado of tho whites of two eggs and pow
dered sugar. Dot over with bits of red,
acid jelly. Or the apples may lo bakod
without tho bread, piled up in pyramid
form and frosted.
Absut Wasalnc.
I have iiovcr tried washing in any
way that suited mc liko putting clothos
to so.tk in warm soup amis, and letting
thorn lay a few hours ; I then rub, ring,
boil, suds and rinse, t always shave
the soap and disolvo it in hot wator.
My gianilii washdish is just the dish
for it. I always uso soft water for tho
blueing water unless I am obliged to use
hard, which is very soldom. I often
put my clothes to soak Monday morn
ing, rid) them out after dinner, and lay
them in clean water until the next
morning, when they aio ready to bo
boiled ; and tho washing is douo with
much less expenditure of strongth than
whon it U all done in ono day, nnd tho
clothes always look clear.
Hut I am always on tho lookout for
some easier way, and havo tried most
of tho vnrictios of soap so highly adver
tised, and am not entirely atisiled with
any. For two weeks I havo triod using
kerosene, and I can sco that it is a
great help in tho rubbing, but I am
afraid clothes would got dingy after a
while. Ploaso tell mo how I can hotter
my formula. I put them to soak in
strong suds, and when I put them on to
soak in tho morning, I added, ns nearly
as I could guess, a tahlespoouful of oil
to a pail of water. When they had
boilod, I put them into clean water and
rubbed them moro or less as thoy
seemed to require, rinsed them thor
oughly, and hung to dry. Of courao I
only boilod tho cleaner garments tho
first time, and put in moro when I took
them out. Tho first timo I put tho oil
in when I put tho clothes to soak.
Which is tho best way? J.nst week it
soemed to me that some of tho clothes
looked a littlo dingy, but may havo
been mistaken. I hope to hoar reports
from others in this matter.

failed would dispenso with boiling thoy
would be pleased with results. I havo
ready clean wuteu boiling hot, and whon
tho clothos nro washed, pour it over
them, cover to retain tho steam, and in
twenty minutes or los, I ixiund a rain
uto or two, wring, rinse, bluo nnd hang
out, and havo owry reason to bo satis
fied with my washing. Tho clothes aro
whito and sweet.

was again trying to win a lady bird to

who had early left him a despondent
widower. It was in vain that ho show

and inventory of his lonely homo, but
