ately bo entirely dovelopod into gas anil

is n simple composition of nitrogen and
hydiogcn. Xo rcsiduo is left from tho
ammonia. This gives it its superiority
mh a leavening powor over soda and
cream of tartar mid alone, and has in
duced its use as n supplement to these
in tick's. A small quantity of ammonia
tit the dough is ellective in producing
biead that will lw lighter, sweeter, and
more wholesomo than that risen by any
other leavening agent. When it is act
ed upon by the heat of baking the leaven
gas that raises the dough is liberated.
In tins act it uses iiscit up. leaving no
trace or ivstdum whatever. The light

biscuits, etc., and so sought after by pro
fessional cooks, is said to be imparted to
them only by tho use of this agent.
