Ed. Faiimuii: In tho Fakmkk of tho ICth of Dec, I road an article from Mrs. Ella A. Ilibbs, wishing that some ono of your readers would give a recipe for making yeast bread. As I think that good yeast is tho first thing essential in making f,ood bread I will give a recipe for yeast, first: Yi:ast. 1'aro six large potatoes; put them in a porcelain or bright tin vevel, with a small handful of hups (Oregon or California hops are the best) in a thin niu'-lin bair; pour on them two quints of boiling water, boil one halt nour; then mash tho potatoes and pour on (hem tho hop-water they were boiled In. ...11 Am. in nimi'iil nrmcir. nun ti'.l- name?" continued ho, without waiting for a 'f, in ' wlion milk-warm. add one fcacupful lieMi yeast, and sot away to raise; when light, add ono teaspoon- ful salt. Sot where it will keep warm; In tho morning, when light, add two tea'-noon fills salt; make into bread, (not too stiiT but so that it will work well) mold well and sot where it will keep warm till it is perfectly light; then mold again and make into loaves; raise again, and when it is puffy urdor tuts lingers it is light enougn to dukc. Jlako at least one hour, in a moderately hot oven. This will make at least tlneo largo loaves. Never use soda in yeast hi cad. r J)nn;i) Vka vr. Take one large hand ful of good hops, Douron thorn two qK boiling wato-jboilthem till the strength is all out of the hops; then take one pint of sifted Hour; place in an earthen or bright tin v.ssjol, and pour the boil ing hop-water on tho Hour and set away to cool; add one good coll'eo cupful of iresli yeast and set away to raise; when perlcctly light stir Iu two-thiuls corn meal and the remainder Hour, till still" enough to make into cakes with tho hand; lay tho cakes on a cloth where the wind will blow on them: turn them every day till dry. This yeast will keep good one year U carols taken in making it, when tho weath er is dry and warm in tho Spring, and it is always handy for farmers' wives to start what is termed "wet yeast" with. jUlls. iU.
