WILLAMETTE FARMER. 7 1e Djvihy. How to Make Philadelphia Butter. The way to make this batter Is to closely observe not ouly one or two bat several impor tant poluts on a combination of which sucoess most clearly hinges. After the two prelituin nry points are secured, such as good cows we prefer the JerseyB for making the finest flavored butter, with good feeding and management then come other essential points which, for convenience, we number: 1. Entiro cleaullness is indispensable in the stable, milking sheds, and spring house. These must be well ventilated and entirely free from all noxious odors in them or in their vicinity, 2. The milk must be skimmed at the proper time, and soon enough after milking to obviate all danger of lnoldlness or absorption from thickened or sour milk of the results of fer mentation. This cannot be absolutely deter mined by any number of hours after being set nway, but must depend on tho experience, judgment and observation of the person in charge. A change of the wmther tnuy neces sitate it sooner or 'later. To skim just at the right time is an important elameut in "gilt edge butter." If there is any rule, it may be, perhaps, comprised iu to skim at the precise earliest moment, that all the cream may be pro cured from the milk. 3. Keep tho vessel containing tho cream down to a low temperature, stirring it ouly with a wooden spatula or long-handled spoon. This low temperature for the cream, to as to avoid nil dangers from fermentation, is very Important. 4 Avoid what is called washing the butter, which cnnles off tho fine flavor, so much val ued here. S. Churn the cream at such a low tempera ture, that at the point of turning iuto butter, it will eoino hard, and this is entirely within the control of the dairyman, by throwing in either lumps of ico or pounded ice at the crit ical moment, and glvu the churn n few more turns, so as to lower the temporature of tho tnass, und allow the butter to be taken out hard. If this is not done, nnd the mass of butter is soft or oily, it cauuot be properly worked and will never muku a good article. C. Two workings uro required, one on taking out of tho chum, to get rid of most of the buttermilk, when it is salted ami laid away for two or threo hours. The dual working is then douo on tho butter-table, ten or twelve pounds nt a time, or on tho butter-worker. A line inuslin cloth is wrapped around a tlue sponge, with which the flattened out surface ol each lump is patted, till everything is absorbed like buttermilk or water. 1'ho vpougo and cloth are, of course, from time to time wrung out, as needed. The (.pougo is n pott erf ul and thorough absorber uothiug equals it iu this respect. The salliug is at tue rato of two-thirds ot an ouuee to each pound, liutter may bo worked too ninth, and it may bo worked too( llltlo. 7. AUleruoy or Jersey cows ought to give tho butter the approved golden color, oven iu winter; but if it is not the right color to please the eye of the fastidious citizen with his uiur ket basket, artificial coloring must bo used. 8. It must be solidly and neatly printed, huvo n flue muslin wrapper around eueu pound or half-pouud, and bo ilelivered iu market as solid as when it left the spring. The above are eight Important, indispensable poluts in making tine l'hiludelphla butter. If any one point is omitted or neglected, the game is all up. Attention scrupulously to auy beveu of tho requisites will not insure good butter. They mut nil bo observed. Supposing all are attended to but Ko. 7; neglect hero will remler all tho previous caro iu seven important par ticulars nugatory aud useless, if the best prices are expected to bo obtaiued. 1'ruetleul tanner Leaks of the Farm. Wo frequently enquire, says an exchange, of dairy farmers a we mett them, the amount of butter or milkr-their cows average per nnuuiu, nud it is very rarely they aro able to tell. Tho capacitvnf dinYrent cows for butter, varies from 150 to "J30 Uh. iu the year and the smallest amount is by far the mort common. The vie-ltl ol milk varies from 2.C0O to S,000 lbs. per auuuui, and there are herd iu the country, returulug their owners nnuuully theso latter figures. There is some thing, of course, in management, but wo believe this wide margin of dilUreuee is chit-lly owing to the difl'ereuee iu the milking capacity ot cows, a good cow contlug to more to keep that) a poor one. That farmers who tuako dairying a busiuoss, should thus be uuablo to tell tlio average vielil ot thtircows, and whother they ure makiuga profit or n loss out of them, is a leak iu farm management, which would not be tolerated iu any other kind of busiuess. One, two, three, or four cows iu a herd of twenty or thirty, may bo kept from year to year at a positive Iobs, aud are continually weakening tho average production of the whole. We hold that every cow should be subjected to an examination of what she is about. Her milk can very readily be measured, the time she goes dry is easily arrived at, and a luomoraudum in ado of it, aud tho richuens of her milk, aud whether she is adapted for butter or cheese, or either, cau bo pretty accurately ascertaiued by a glai.s tube set on tho mantle piece or in the closet. This should hiive a graduated scale, divided off into eighths or tenths, so as to admit of ready com parison. A cow yielding a large amount of milk. mm-, as readilr seen by the thickness of cream rimug in the tube, be a very poor butter cow. Though deficient iu oil, it may neverthe less bo very rich in caseluc, indicating value for a cheese dairy, or mo iuiik muy ueiuiu nuu unterv. Hhowlnir that the cow should go to tho butcher. It I wore easily operated luau mo uruiuaij iciuiuui, w vmm.m, -..v. ..... butter forms in coarse grains, its operations in this respect being superior for a first-clam pro duct, iut) ease vuu vtuieu tue tuutu is uj.v atvd, the uniform manner in which the milk or cream is agitated in all parts, together with the convenience of the machine for being cleaned, all make it preferable to any revolving box or barrel churn we have seen. The McComb churn is also a box churn in form, in which two dashers operate. The dash ers work alternately up and down, being sus pended from an iron crank above the churn and restingon supports rising at each end of the box. The crank is accelerated in its motion by gearing, and as it revolves the dashers are op erated up ac'd down. The new feature of this machine is in the manner in which the dashers are made to operate. We did not see it tested in churning cream or milk, but presume the character of butter it will produce is similar to that where the old dash churn is used. A new device for butter packages has also been brought out. It consists ot a cylinder of glass, stone, or galvanized iron, with wooden eads groved so as to receive tho ends of the cylinder. Then there are four or Ave iron rods which go through the headings outside the cyl inder with nut and scrow, by which tho bonds may be drawn together, thus ruitkiuu the track ages water-tight. The inventor claims that the packages can be made very cheaply, and may be used for other purposes than for butter after thoy have been sent to market and served once as butter packages. The dovlco docs not strike us favorably, aud we do not believo galvanized sheet iron will inako a good material to be used for butter packages. How to Kkkp Dctter Cool. Get a large flower-pot, (say Ko. 12) plug up tho hole with a sound cork, seal It. Now put a quarter-brick or othor square, heavy body in tho bottom, to serve as sujiport for a second, but smaller not, (say No. 10), which must also bo plugged iu tho same mauuer. Eny, Mechanic. Weeds and Seeds. To study how to exterminate woeds is of no less importance than to study how to avoid them. A slugle sowing of foul seed, may pro duce n lastiug injury to the laud, as every one knows who cultivates tho soil, llcsldes being pests to bo hoed up and cut down to save the crops, they extract from tho soil somo of Its most vaiuauieiugreaieuts, tncreny rouuiug it ol its richness. If every one would be careful not to plant weed seeds, tho soil would bo checked. And it seems to mo evident, if some one liming clean productive laud, would raiso grain free from foul seed, it would llud n ready market at mi extra price, to the advantage of all parties con cerned. When we remember that our grain seed and plants have been, and are being supplied from all parts of the globe, how Important that we watch for weeds, and do everything iu our power to prevent their dissemination iu our soil! It would seem a proper subject for tho de partment of agriculture at Washington; also, while the question of exterminating the ground squirrels is up for legislation, would it not be a fair legislative consideration iu our State? On mauy farms, weeds have grown to seed year after year, aud tho winds have carried the seeds across tho boundary Hue, to stock the neighbor's land, aud thero is no remedy for him but to light off their eucroaehmcuts, and keep them down the best he can. In tho older settled couutries, it pays to weed the grain flelds, which is done yearly by gangs of women nnd children, who go about from farm to farm for the purpose The day will come on this continent, if it has not already come, to do the samo hern. Until that time does come, why uot require by law every ono who will grow weeds, to keep the seeds from his neighbor's laud? Cor. Mural Press. Skillful Navigation in a Fog. A correspondent to tho Iloston Ailverltur, who writes from London, after completing his voyage across tho Atlantic, says: Tho Siberia, of the Cuuard lino, sailed from Iloston, July 1st, on tho new southerly course for Liverpool, ami striking into tho fog ou the first duy out, did not meet with llftceu minutes clear weather, when hu observation could, be taken, for almost eight days. Hut no pains were spared by tho oflicers to make the dead reckon ing accurate. The log was thrown every two hours, day aud night. Ou the evening of thu eighth day, our latitude was estimated to Ihi north 11) M', but the fog was still deuxo enough for the fog whistle fo be blown. A little later It liited very suddenly, then tho clouds broke, disclosing the pointers of the Dipper, and a moment later tho North Star itself was visible. Tho chief officer hastened for his sextant, care fully took the altitude of the Mar, nnd found it to bo IU 30 to a second. Aud ou the tenth day we came in sight of the Hkillings, and born up thu coast of Iielund to the 1'aslnett Light with out changing the course a fraction of a point. Aud this was the first time the Siberia had sailed upon the new course, and during three fourths of tho time shu hud been enveloped iu fog. A New Ick-Maciiisk. Iu this warm weather the description of a new ice-machine muy not seem unseasonable. According to the ArUlt gtlriT, M. Toselh, of I'uris, has invented such a machine, of entirely original construction. It consists of a vtbudl formid by a spiral tube. The spiral is open at one end, aud communi cates with a vessel of water. The other end of tho spiral empties into the hollow axis of thu wheel, and from this latter communication is had, through a tube, with a worm, which Is placed iu a cooler. When the spiral is revolved, it takes up water, alter thu mauuer of Archimedes' scrow, and forces It n long dis tance through the coolenl worm back into the reservoir. The outside of the spiral, being half the time uuder water, is always wet, and the wiud blown over It evaporates this moisture, aud thus abstracts tho heat from tho water in the coil.
