them with large dry limas, Amer
ican cheese and a little bacon
and onion? 'Tis an easy, inexpen
sive entree.
Stuffed Baked Tomatoes
4 large tomatoes
Sale
Pepper
1 cup cooked large dry limas
Vi cup shredded American
cheese
4 sliced green onions
V cup fine dry bread crumbs
4 slices crisp bacon
Cut tops off tomatoes and hol
low out. Sprinkle with salt and
pepper, and drain upside down.
Mix cut out portion of tomatoes
with limas, cheese, green onions,
crumbs and 2 slices crumbled
bacon. Fill tomatoes with lima
mixture and set in custard cups
or shallow baking dish. Crumble
remaining bacon over tops. Bake
in moderate oven (350 degrees F.)
about 20 to 25 minutes.
Makes 4 servings.
