Phi, educational sorority, will
meet this wr ;k. Nu Chapter will
have Its Christmas party Monday
evening at the home of Miss
Norene Von nhlen, on the River
Road. Members are to meet at
the Eugene Hotel at seven-thirty
o'clock, for transportation.
Miss June Warren, social
chairman, has appointed the fol
lowing committees: Miss Doris
Holland and Mrs. Joseph Rudd,
entertainment; Mrs. Byron Pos
son and Mrs. Fred Rugh, refresh
ments; Miss Eleanor Gray, to
assist Miss Warren and Miss Von
Ohlen with decorations.

drawing for 1948, and Christmas

meet again on the second Thurs

tion will not meet, as the usual
meeting day falls on Christmas.
Recipe
Baked Veal Cutlets
1 pound veal cutlet
y4 teaspoon salt
teaspoon freshly ground
pepper
1 cup crumbs
1 egg
3 tablespoons bacon drippings
cup milk
i cup water
1 tablespoon flour
1 teaspoon cornstarch
Yt teaspoon salt
Combine flour, cornstarch and
salt. Blend with milk and water.
Cook in double boiler until thick
ened. Season cutlets with salt and
pepper. Dip in crumbs, then in
beaten egg and again in crumbs.
Saute in hot bacon drippings until
brown on all sides. Place in cas
serole and cover with cream sauce.
Bake at 325 for one and a half
hours.
