Gelatin as an emulsifying agency is
already in use In a limited way, in
foodstuffs such as ice cream, It is
entirely possible that a new process

are made up of "sels" or gelatin sub
stance. Dr. Friedman says, aud
the present studies are being carried
on with the hope of throning more
light on related biological processes
and problems, fn order to carry on
tile research work it has been found
necessary to duplicate the life tissues
by use of proteins, and in order to
further simplify the study. Dr. Fried
man is now at work on non-atjueous
processes, or a process by which the
study can be mnde with a substance
that has had water remored.

for one of the most important recent
discoveries in biology in which he
