While balanced diet i alwayi
necessary, the energy-producing foods
are needed in lesser ratio during the
summer months than during cold
weather, when fuel is needed to keep
the body warm.
Few vegetables are of hinb caloric
value. The old phrase, "cool as a
cucumber" is revealing In that it ad
mits this vegetable contains no heat
producing calories. The larjio amount
of water present in all vegetables
makes even those known as ''star
chy" low in calories compared with
cereal foods.
Sauoes Add Nourishment
However, remember that the way a
vegetable Is served may add many
ralories. Butter immediately adds fat
calories. Sauces contribute protein,
fat and carbohydrate calories. A cup
of medium white sauce contains about
420 calories of protein, fat and car
bohydrates. One tablespoon butter
furnishes 100 calories of fat, so the
richer the sauce the more calories.
Salt and pepper have no caloric value
and when a vegetable is seasoned
with salt and pepper and just enough
butter to make it palatable there is
little change In ita food value.
8ome knowledge of the composition
of vegetnblea is a help In planning
and serving vegetable meals. Peas,
corn and lima beans provide some
protein calories themselves that are
worth considering. Tomatoes and
apinach are lower In fuel value as a
whole, although their proportion of
protein caloriea is good. The summer
vegetables contain little of the woody
fiber known as cellulose which has
no food value Thia shows that vege
tables supplemented with milk pro
vide a wholesome and adequate diet
if they are used In abundance ana
variety. It also mtikes it possible to
build menus around one main vege
table dish to furnish intresting meala
at moderate cost.

sauted in butter on top of the stove.
This Is a-quick way to cook them.

in a covered baking dish or casserole
in the oven.

good advantage.

match with 53 men, she lost only one
event. At Raymore. Mo., recently, she

In Albany
A group of thirty-five from the
Eugene Rebekah lodge plans to go to
Albany Friday evening to pay a fra
ternal visit to the lodge there.
The local group held its regular
meeting on Wednesday evening of
this week. Miss Eva Worden and
Mrs. Josephine liny en were in charge
of entertainment. Meinlters brought
tea towls for the Odd Fellows home
at Portland. Seventy-five were pres
ent for the meeting.
The next meeting of the local lodge
comes on the first Wednesday in
September.

Let Child Be Decorator
I saw a boy'a room this aununer,
two boys' room, and their smart mo
ther had had synthetic wall-bonrd
placed over the native wall. It was
cream colored and plain and those
children had It plastered and pinned
from celling to floor with pictures
they had saved or cut out. There was
real Interest In that decoration be
cause it was their own.
Oh. yea, It was a "restless'1 room,
but these youngsters were a little old
er, their nerves didn't bother them
and they slept like dead. As soon aa
a baby can paste up picturea, I think
a blank wall might be a great joy to
him.
