LEMON-CHERRY PARFAIT
1 teaspoons cornstarch
l, cup sugar
Vi cup cherry jure
1 cup drained pic cherries
red food coloring
1 package vsn:lla pudding and
pit filling
1 cups milk
V cup lemon juice
W teaspoon graced lemon rind
1 rgg white
Mm cornstarch and sugar in a
saucepan Add cherry juice and
bring to a boil, stirring frequently.

Add drained cherries and a few
drops of food coloring
Combine pudding mix and milk
in saucepan Cook and tir oxer
medium heat until mixture comes
to a full boil Remove from heat,
add lemon juice and rind
Beat egg white until stiff enough
to stand in moist peaks Fold in
pudding. Spoon alternate layers o(
pudding and cherry sauce in par
fait glasses Chill about 1 hours
