''" ... , V. .i t Oregon Product I (i Home Grown Celery On Popular Buys List By MAXIN'E Bt'BEN - - v Stateimaa Wemaa's Editor Celery is a mighty nice vegetable right now usually is, as a matter of fact and it's usually fresh from the fields of Lake La: bish. At this time of year all the stalks are probably tender, and of raw-eating caliber, but even if they aren't they'll serve well as a cooked vegetable in lome mighty good dishes. We well remember, away back in the 20s and early JOs when snapping in Ihe farmer's market in Seattle, the producemen (who weren't farmers at all) would look askance when we wanted green celery stalks. They gladly got rid of them to those mad people as they probably considered us. Now green unbleached stalks are much desired and we seldom aee artificially bleached celery any more. Here li one of the many ways to cook celery and make it a tine vegetable dish with meat, or a meatless main dish. CELERY LOAF H cup milk 1 teaspoon salt 1 stalks celery U teaspoon paprika 1 cup breadcrumbs i eggs 3 tablespoons melted butter Clean and trim celery, cut in 4 or 5-inch pieces. Boil In sailed water until tender. Grind in meatchopper (I'd cut it finely before cooking it then it could be used without further cutting). Soak breadcrumbs in milk and stir into celrry. Add melted butter and seasoning and blend in egg yolks, working until smooth. Fold in beaten whites and bake in a buttered dish set in a pan of hot water for 40 to 50 minutes at 37S degrees. Serves 8. Regular stewed celery has several uses, too. You can serve the stewed vegetable merely with salt and pepper and a generous amount of butter if you like, or add cream sauce, or to go a step farther, put the creamed celery into a baking dish, sprinkle gen erously with crumbs, top with grated cheese and bake. Creamed celery with lots of green pepper pleases those who love peppers. An old favorite of ours is sauteed celrry with corn, either fresh or canned. Give the two plenty of butter and you've vegetable! Celery Amandine won't play second fiddle to any dish. CELERY AMANDINE 4 cups celery slices 1 cup light cream 4 tablespoons butter H cup double strength chicken Salt and pepper bouillon 1 tablespoon chopped chives 1 cup toasted shredded almonds 1 tablespoon chopped onion 14 tablespoons flour" Season the celery, put into covered pan with the butter and simmer slowly until celrry is done, shaking pan frrqurntly to keep from burning. I'ncnver pan once during rooking and sprinkle with chives and onion. When tender, sprinkle celrry with flour and stir, add cream and bouillon slowly and when thickened and smooth, cook for one minute more stirring constantly, adding almonds, and adjusting the seasoning. Modern Etiquette By Roberts I.ee .. ' . Q. Is it proper always to seat a woman at a table to the right .of her male companion? A. When practical, yes. The few definite rules about this include the seating of a guest of honor on the right of the host or hostess or chairman, and the military rule by which the senior officer walks as well as sits on his junior's right. Q. When someone to whom one has been introduced takes leave of one by saying, "I am very glad to have met you," what is an ap- proprinte response? A. "Thank you," or, "Thank you very much," or, "I've enjoyed meeting YOU." S.W.2).
