Bring to vigorous boil. Turn the heat as ' low as possible. Cover with a lid and leave over this low heat 14 minutes. R e m a v the aaucepan from the heat but leave the lid on 10 minutes. Stir the French dres$ -ing into the rice. Caver and cool Stir in the rlery and Blue cheese'' Slice the hard -cooked eggs and' halvo each alice. Gentry stir the' eggs Into the rice-celery mixture. Cover and chill in the refrigerator until time to serve. Just before serving, cut the avocado In half. Remove the aeed and peel. Cut In to thin slices and halve each slice. Hi cups water n Tomato wedges for garnlsh; If desired Melt the fat la a large skillet Add the onions and celery. Cover and cook over a medium beat un til the celery it almost tender, about M minutes. Stir occasional ly. Add the ground beef. Cook, stirring occasionally until the beef i cooked throuih and partially browned. If mixture should become too dry. add a small amount of additional fat. ' While the beef cooks,' put the rice, salt and water in a S-quart saucepan. Bring to a vigorous boil Turn the heat as low as possible. Cover with a lid and leave over this low heat 14 minutes. Remova the aaucepan from the heat but leave thelid on until ready to serve, at leant 10 minutes. v After the beef cooks, atlr In the soy sauce, catsup and black pep per. Sprinkle the flour over the beef mixture. Stir well to blend in the flour. Gradually stir in the water. Cook, stirring frequently, until the mixture thickens, u -a thinner mixture is desired, add a small amount of water. " Serve the beef and gravy over the hot cooked rice. Garnish with tomato wedges. If desired. This re cipe makes servings. Cornstarch Dessert There are many desserts wilh cornstarch, but chocolate corn starch pudding satisfies most, and no ned for others. CHOCOLATE PUDDING i", tahleaooona corn starch 4 tablespoons sugar ' t cup coij milk 4 tnhlepoops cocoa 'or 1 squares bitter chocolate) 1H cups scalded milk H teaspoon vanilla Pinch salt 1 tablespoon butter Mix cornstarch, sugar and co coa with Ji cup cold milk. Scald remainder of milk. Carefully add the cornstarch, sugar and cocoa mixture to the hot milk. Cook un. til smooth and thick. Turn switch sff. Add butter. Cool and add van illa.
