Sour Cream. Recipes
Are Again in Vogue
By MAXINE BCREN
Statesman Woman's Editor
Sour cream cookery, coming back into vogue after a whole gen
eration of life without it, has been accepted by many homemakers
with great delight. When home refrigerators came into kitchens
in great numbers and pasteurized cream became the general rule,
sijur cream simply didn't exist. And conditions remained that way
foT a long time, for it was morP trouble than it was worth to put
in a special order with the milkman for sour cream a day or
two ahead.
Now however, dairies are furnishing sour cream regularly to
their customers and it's available at every grocery store that car
ries a good supply of milk and cream.
So back we go to sour cream recipes, and perhaps some women
of the new generation are short of good ideas. Not so my files,
they abound in wonderful ways to use sour cream, though the
books may be out of print and the cards in the file yellow with
age, the proportions are stilt the same.
Take a sour cream cookie for Instance
Sour Cream Cookies
1 cup sour cream 1 teaspoon vanilla
2 cups sugar 1 teaspoon soda
1 cup shortening, softened Enough flour to make a
2 beaten eggs" dough that will. roll out
Mix in order given and roll out ' Inch thick. Cut in fancy shapes
and bake on a greased cookie sheet at 330 degrees for about 10
minutes or until lightly browned. This cookie is an excellent one
to cut into fancy shapes for children as they are not too rich, but
nicely flavored and will' keep. .
Sour cream dressings are famously good for cold slaw or vege
table salads. i
Sour Cream Dressing
1 cup sour cream 1 teaspoon salt -
2 tablespoons lemon juic lt teaspoon pepper
2 tablespoons vinegar 1 teaspoon prepared mustard
1 tablespoon sugar
Beat cream until thick and smooth, mix other ingredients and
add to cream while continuing to beat.
Mushrooms in sour cream are an elegant gourmet dish to try
out on your next extra special guests.

2 tablespoons gutter 4 tablespoons thick cream
Bouquet of parsley, green sauce
onion tops 2 tablespoons sour cream
Salt snd pepper 1 teaspoon chopped parsley

in a heavy saucepan with butter, bouquet and seasonings. Cook
'gently for IS minutes. Remove bouquet, add sauce and cream and
bring to a boil. Add chopped parsley and serve very hot on toast
, points or hot biscuits.
