Potatoes Remain One
Of World's Favorites
By MAX1NE BI RF.N
Statesman Woman's Editor
Whether you dig your own potatoes or lei the professional, you
probably just love the dear ojd things. Of course, potatoes have
been given a black ball by the fellows who plan the reducing diets,
hut most ot us like an occasional one slipped in here and there
regardless.
Anyone ran boil a potato they say, and most everyone can
bake one. but it takes some talent to do the unusual with them.
The Greeks have a way with potatoes, and here's the recipe
for one of their favorites:
Potato Kephterdrs
1 pound cold boiled potatoes Chopped parsley
1 tablespoon melted butter Chopped green onion
Salt, pepper 2 finely chopped tomatoes
4 tablespoons flour
Sieve the potatoes, add melted butler, seasonings, parsley and
onion, work in tomatoes and Hour, kneeding lightly. Roil into bals,
flatten into cakes and fry in hot fat or oil or bake on a greased
tin until brown. They should be soft inside.
Here again the potatoes are cooked with tomatoes:
Pommes de Trrre a la Maniere d'Apt
Cut potatoes in rounds 5 tablespoons tomato puree
Olive oil Bay leal
Salt and pepper 5 stoned ripe olives
Breadcrumbs
Put oil into a shallow baking dish, add tomato and potato?,
seasonings and .simmer tor 5 minutes. Barely cover the potatoes
with boiling water and simmer 30 minutes. Now add olives and
cover with a layer of breadcrumbs. Put in a moderate oven and
cook for 30 minutes more
Or perhaps you'd like to cook your potatoes like the Peruvians
do
Huanraina Papas
6 large potatoes
Cup cottage cheese
't cup milk
.luice of 1 lemon
Salt and pepper
Bake potatoes in 400 degrees oven for 45 minutes or until done,
re-el, sene with sauce made this way: beat cottage cheese with
milk, lemon, salt, pepper and onion. Add mashed yolk and
sprinkle with paprika. Serve either cold. or slightly warm, but
do not let it Eel hot Serves fi
