Old-Fashioned Type
Pie Has Fruit, Meat

The very thought of a deep dish apple pie somehow reminds
one of old fashioned cooking, with lots of richness and flavor.
Deep dish apple pies aren't the only kind possible to whip up
we found as we ran across several good sounding recipes re
cently and have collected them here.
You can have a deep dish chicken pie too, an excellent Sun
day dish reminiscent of by-gone days when stewed chicken and
dumplings or it's variations were standard fare for after church:
Deep Dish Chlrkea Pie
4 cups cooked chicken meat . 2 cups chicken stork
'Salt, pepper, nutmeg ( artichoke bottoms
3 eggs, raw Pastry
4 hard cooked eggs
Line a deep dish with flaky pastry, brush with melted butter,
in a mixing bowl put chicken rgeat, flavored to taste with salt
papper and nutmeg. Add eggs, lightly beaten, chicken bouillon
or stock and mix well. Add artichokes, canned or freshly cooked,
and coarsely chopped hard cooked eggs. Season, turn into pastry
lined dish.
Cover with top crust, cut slashes in the top, bake for I to
10 minutes in a 42S degree oven, brush lightly with cream and
bake again for about 25 minutes in a moderate oven. Shake
dish gently and serve very hot. If necessary, add more liquid
through slits In crust along toward last of cooking.
Then there's a deep dish meat pie; this one with the bran
crust a featured part.

Salem Rounders Dance
The Salem Rounders will meet
on Thursday, June 21 at 1 p.m. at
the K. C. Hall for their semi
monthly dance session. The dance
of the month for June, . "Lovers
Walts." will be reviewed. Instruc
tions will be given for "Sheridee
Waltz." Other old and new round
dances will make up the program
for the evening.
1 cup diced cooked potatoes
2 cups diced cooked veal
2 tablespoons shortening
H teaspoon minced garlic
1 teaspoon salt
i teaspoon pepper
1 tablespoon paprika
l'i tablespoons flour
2 cups meat stock or water
1 cup diced cooked carrots
Brown veal in heated shortening: stir in garlic, salt, pepper,
paprika and flour. Add meat stock gradually, stirring constantly.
Simmer about 10 minutes, stirring occasionally. Add vegetables;
mix carefully. Pour into greased 1'i-quart casserole or baking
pan. Combine bran and milk; let stand until most of moisture
is taken up. Sift together flour, baking powder and salt. Cut in
shortening until mixture resembles coarse corn meal. Add bran
mixture, stirring only until combined.
Turn dough out on lightly floured board; knead gently a few
times. Roll out to 'i inch in thickness; cut with floured biscuit
cutter. Place biscuits on top of veal mixture.
Bake In moderately hot overn '400 degrees) about 30 minutes.
Serve at once. Yield: 6 servings. 1
And finally a fruit pie a combination, baked in a deep dish.
Use fruit cocktail.
Deef Dish Frelt Pie
2 to 3 cups fruit 4 tablespoons butter
H to 1 cup sugar Rich biscuit dough
t teaspoon spices
Butter baking dish. Prepare fruit 'peaches, apples, cherries,
etc.). Arrange in bottom of dish and add sugar and spices. Dot
with better, Spread-over this rich biscuit dough If baking with
own meal, cover and bake JTjO degrees, l'i to 2 hours, ff bak
ing alone, bake uncovered at 375 degrees for 1 hour.
