Let The Dessert Be Anything Just So It's Strawberries . . . 17 k - - ' i " . Here we've the meringue shells used to carry the berries top. Berries May Take on Some Sohpistication By MAXINE Bl'REN Statesman Woman's Editor Strawberries and cream for breakfast, strawberry pie for luncheon, strawberry shortcake for dinner, and a few big ones dipped in powdered sugar for a bedtime snack, hew big-city folks would envy us, with our wonderful supply of fresh produce only an hour's distance from garden to table. 211 eooked. and put in attractive layers between vanilla-flavored tapi oca cream pudding fluffed up with egg whites. Strawberry 1 egg white 2 tablespoons sugar 1 egg yolk 2 cups milk t tablespoons quick-cooking tapioca V teaspoon salt i tablespoons sugar 1 teaspoon gelatine Beat the egg white until foamy. Add 2 tablespoons sugar and continue beating with egg beater until meringue stands in soft peaks. Set aside. Mix egg yolk, milk, tapioca, salt. 3 tablespoons sugar, and the gelatine in saucepan. Cook and stir over medium heat until mix ture comes to a full boil '5 to 8 minutes i. Pour a small amount of hot mixture gradually into meringue, blending well. Quickly .stir in remaining tapioca mixture. Add vanilla. Cool 20 minutes, stir, and pour a layer of tapioca cream into cooled, baked pie shell. Cover with a layer of strawberries, then pour remaining tapioca cream over berries. Chill until firm. Before serving, gar nish with sweetened whipped cream and whole berries. Another luscious dessert is a combination of strawberries and angel cake. Because the ready mix angel cakes have proved so good, this dessert is no longer one that takes an expert to make. It can be used anytime of year, because it's good with frozen ber ries too. Strawberry Whipped Cream Angel Cake 1 package U7 oz angel 2 cups heavy cream food mix 2 tablespoons strawberry 2 packages sliced straw- juice berries l ctip granulated sugar Prepare angel food mix as directed on package. Pour batter Into ungreased 10-inch tube pan. Bake in moderate oven (375 ) 30 to 35 minutes. Cake is done if top springs back when pressed light ly with finger. Cool cake upside down in pan, propped up from table. Then remove cake from pan and cut in half crosswise. Drain strawberries. Whip cream and sweeten with the straw berry juice and sugar. Fold in the drained strawberries. Spread between layers and swirl over top and sides of cake. Chill before serving. Makes 12 servings. Note: Keep cake refrigerated until used. Coconut adds its charm to the filling for tarts: Ambassador Strawberry Tarts 1 cup cream, whipped 1 egg white, stiffly beaten I4 cup sugar h teaspoon vanilla 14 cup shredded coconut, cut Combine cream, egg white, sugar, vanilla, and 1 cup coconut. Place strawberries in tart shells, pile cream mixture on fruit, and sprinkle with remaining coconut. If desired, place one whole strawberry on each tart before sprinkling with coconut. Serve at once. HOBO SPAGHETTI Take along a can of spaghetti with meat sauce on your next fish ing trip. It's a stick-to-the-ribs main dish to heat over camptire or grill, and its tangy goodness goes well with the fish you catch. Two Chocolate Beverages Given Chocolate beverages are usually popular with any one who's offer ed a taste. Here are two: FRENCH CHOCOLATE 24 squares unsweetened chocolate tt cup water cup sugar Dash of salt Vt cup cream, whipped I cups hot milk , Add chocolate to water and place over low flame, stirring until cho colate is melted and blended. Add sugar and salt and boil 4 minutes, stirring constantly. Cool. Fold into cream. To serve, place 1 rounding tablespoon of chocolate mixture in each serving cup and pour hot milk over it, filling cup. Blend. Serves I. This is a rich chocolate especially attractive to serve at the table. ICED CHOCOLATE Prepare hot chocolate. Cool. Pour over cracked ice in tall glasses. Stir to blend and chill. Top with sweetened whipped cream. Serves 4. RELISHE8 Ripe olives and crisp garden relishes along with hot garlic toasted bread will keep your guests happy while waiting for the meat to barbecue. GOES FARTHER, TOO! 1 11 THREE DEEP You can safely store pork chops in your refrigerator for about three days. Just layer the chops between two pieces of waxed aper. Browned Rice in Corn Mixture Here's 1 delicious combination to serve with either broiled or fried chicken. Melt 3 tablespoons marga rine or butter In a saucepan. Stir in 1 cup uncooked white rice and H cup finely chopped onion. Cook, stirring occasionally, until the rice is browned. Slowly add 2 cups water, 1 teaspoon salt, Vt teaspoon black pepper and 2 tablespoons chopped green pepper. Bring this mixture to avigorous boil. Turn the heat as low as possible. Cover and leave- over this low heat 14 minutes. Turn off the heat. Stir in IV to 2 cups whole kernel yel low corn. Immediately cover and leave lid on 10 minutes or until ready to serve.
