Christmas candy miking may bring out the adventure in
many, but in more, it means making the old favorites fondant,
fudge, brittle and popcorn balls. And last-minute recipes
should be familiar.
Fondant, though a very simple combination of sugar and
water and maybe corn syrup, becomes pretty elegant randy
when given a coating of chocolate or more fondant, or a filling
of fruit or nuts. Here, in answer to a request, is:
FONDANT
2 cups sugar 2 tablespoons light
1V cups water corn syrup
Boil together to 238 degrees or until it forms a soft ball
when tried in cold water. As soon as sugar dissolves, wash
down sides of pan with cloth tied on a stick, or with a brush
(a. little more water in the syrup won't hurt). Put on a lid,
for a few minutes, so crystals on sides of pan will dissolve. Do
not stir syrup after crystals are washed off. When syrup is
cooked, pour onto a wet (not greased) platter or slab of marble
and let cool to lukewarm. Work with heavy whip, or a candy
maker's spade, or use a very wide, heavy putty knife, until
creamy. Wrap in waxed paper and let stand in a cold place
for several days. Then flavoring, or adding ground nuts or
fruits as desired. Mold as wanted. This will keep a long time
when wrapped in paper, and mellows in flavor.
Then there's always a demand for good old popcorn balls,
and here's a standard recipe, this one taking brown sugar;

cup white sugar
M cup molasses
Vt cup water
Boil together until it forms a hard ball when tried in cold
water. Add Vs teaspoon soda when removing from fire. Pour
over 3 quarts popped corn and form into balls. Grease hands
before handling mixture.
A third favorite is mlrshmsllows snd one thst the kids
could mate.
MARSHMALLOWS
2 cups sugar 1 envelope plain gelatine
1 cup water (2 tablespoons)
Vi teaspoon cream of tartar
Cook sugar, 4 cup water, cream of tartar and salt until it
forms a soft ball when tried in cold water (236 degrees). In
the meantime, let gelatine stand with the remaining half cup
water for S minutes. Best until very thick, adding color and
flavoring as desired. Pour into shallow pan well dusted with
cornstarch. When cold snd firm cut in squares, remove from
pan and roll in powdered sugar and cornstarch mixed.
