Those sweet herbs that are the pride of many a home
gardener come into an important role if. the family cook knows
about using them. Parsley, chives, green onions are well known
. and much used, but some of the
just stay unused in the garden.. ' i.
ITow take chervil, here's a recipe that turns hamburger
into-Boefs Carres by a mere flip of the kitchen shears:
s : BOEUFS CARRES V
1 pound hamburg 1 teaspoon chervil
1 egg . Julienne potatoes
teaspoon. salt - Chicory
H teaspoon pepper 2 medium-sue onions
Blend the hamburg with the unbeaten egg; season with salt,
pepper and chervil. Pat into a sheet as square as possible and
cut into eight squares. Broil on one side for about four min
utes. Turn and complete the broiling. From the fat that has
accumulated, measure two tablespoons; thicken with two table
spoons of flour, and add one cup of tomato juice. When ready
to serve, arrange two of the meat cakes on each plate; add the
sauce, potatoes, and chicory . garnished with onion rings. Ac
company with French dressing.
And a dash of mint will give character to carrots:
BAKED MINTED CARROTS
3 cups carrots, sliced 2 tablespoons butter
crosswise 1 tablespoon fresh mint,
' 4 teaspoon salt . chopped
cup brown sugar
Select young carrots, wash, scrape, cut in slices and
measure. Place is a casserole, sprinkle with the salt and sugar
and dot with the butter. Cover the dish and bake for 1 hour at
350 deg.. During the last ten minutes of cooking, uncover,
sprinkle mint over the top and complete the baking. '
' ' Snip those bright green herbs parsley, chives or green
onions growing along the garden walk or available in
markets. Make a herb butter for French bread by adding one
tablespoon chopped chives or green onions , and one crushed
clove of garlic. Slice French bread, diagonally, not cutting
quite through the lower crust Spread slices with herb butter.
Wrap loaf in metal foil and heat .in a (400 deg.) hot oven for
15 minutes. Serve piping hot '

Beast, . will feature Nancy
Sprague as Beauty; Jim Heath
as the Beast; Jan Sprague as the
father; Katherine Compton as the
Mother; Jane Sfeerstra and Faye
Butler as the sisters. The second
play, based on Tom Sawyer tales,
will include a haunted house
scene with special ghost ' effects
by all the children of the morn
ing session. Jim Heath will play
Tom Sawyer; Vicki Church, Huck
Finn; Faye Butler, Aunt Polly;
Linda Lou Turney, the school
teacher; Noreen Sahnow, Becky
Thatcher; Kathi Charters, the
tattletale; and Douglas and Scott
Corey,' friends of Tom. The vari
ous types, of puppet plays will
also be shown. "
The afternoon play scheduled
for 2 o'clock," is called Financial
Wizards. Sail Jochimsen and
Virginia Judd are friends of col
lege ager Vicki Van Onsenoord
and Mary Griffith are their sis
ters in high school; Bobbie
Schmidt and Lynn Eyerley are
the little brothers. A neighbor
who collects wild life and leav
it around anywhere is Randol

All plays are the work of the
children. There is no charge, and
