Just as Mother's clothes were the most beautiful in the
world then, so was her food wonderful to taste. And her gown
would probably have had the makings of a, modern dress too, but
only with considerable modernizing, so some
of the dishes she served might profit by re
furbishing to fit into the newer scheme of
culinary things. ;
The pudding we show on this page is ,
reminiscent of mother's, Floating Island, only
different Here it's made from either ready
mixed butterscotch pudding; or a similar
one from your own recipe file, and given an
extra fillip of figs, then topped with "islands'
of whipped cream or meringue.
ISLAND FRUIT PUDDING
1 package butterscotch pudding mix
2 cups milk
cup softened dried figs
V4 cup chopped maraschino 'cherries
4 cup chopped nut meats i
Prepare butterscotch pudding as directed on package. Chill.
Add fruits and nuts that have been cut fine and turn into serv
ing disk Garnish with sweetened whipped cream and cut nuts
or one-egg meringue. Makes 4 to 6 servings.
To soften figs, cover with hot water and let stand a few
minutes; drain. '
Chicken pie was a good old standby, 2nd always welcome.
Frozen vegebtables and non-fat dry milk solids modernize an
old recipe and make it quicker to prepare.
. - CHICKEN, PIE WITH POTATO. TOPPING
4 medium-size onions, quartered
. 2 cups mixed vegetables "7
2 bay leaves
r 2 cups diced, cooked chicken
li cups liquefied instant nonfat ; dry-milk
5 . cup flour '
1 teaspoon salt
1 chicken bouillon cube
4 medium-size potatoes, cooked '
v cup liquefied dry. milk i
V teaspoon celery salt r
- - V teaspoon pepper
Cook onions in salted water until almost tender; add vege
tables and bay leaves and cook until vegetables are thoroughly
heated. Drain; remove bay leaves. Combine vegetables and
chicken in 1 quart casserole. Pour IVi cups liquefied dry milk
Into sancepan and sprinkle flour and salt over surface; stir until
well "blended. Add chicken bouillon cube. Cook over low heat
until slightly thickened. Pour over vegetable chicken mixture.
Mash potatoes; add cup liquefied milk and seasonings. Whip
until smooth and fluffy. Spoon potatoes over casserole; if de
sired, sprinkle with paprika. Bake in very hot 'oven 450 de

2 whole eggs -
6 egg yolks ,
"4 cup .sugar
2 tablespoons cream - '
1 tablespoon melted butter or
margarine 0.
Grated rind of 1 lemon
1 teaspoon lemon juice
3 to 32 cups sifted flour
Fat for deep frying
Confectioners sugar " ,--- "
Beat eggs and egg yolks. Stir in
sugar. Add cream, melted butter
or margarine, lemon rind and
juice, mixing' until well blended.
Add flour to make a soft dough.
Chill. Roll out on lightly 'floured
board or pastry doth to 116-inch
thickness. Cut into strips .1x3
inches, making a slit in the center
of the strip. Pull one end of
dough through slit Fry in deep
fat 373 degrees F.) until, a light
golden brown; Drain on absorbent
paper. Dust with confectioners'
sugar. Makes about 6 dozen Kly
ner. "

substituted for lemon rind and

Grated Parmesan cheese
Brown chops in butter in fry
