Oranges Make Confections; Glaze, Spice
You can put oranges' into the
menu any day, and there's variety
in the recipes using them. Here
are several uses for the all-year
fruit ! ; -
GLAZED ORANGES i
2 large seedless oranges
M cup sugar 1
3 tablespoons water , I
- 1 tablespoon corn syrup j 1
Peel and section oranges. , Com
bine sugar, water: and, syrup,
bring to boil. Add f orange 1 sec
tions and simmer 5 minutes. A
clove can be added to syrup if
desired. ' I j
' ;. MAPLED ORANGE SLICES -
6 oranges ! -
2 cups sugar I t
4 cup corn syrup 5
Vh ups water ; -2
teaspoons maple flavoring i .
Boil oranges until ; tender i and
. slice one-half inch thick. Place
slices in' baking pan and cover
with syrup made j from 1 sugar,
syrup, water and flavoring. Cover
and bake in moderate oven one

This four-day recipe produces
a confection that keeps indefin-
i itely. : - ;
SPICED ORANGES ,
First day: Grate the rind; of 4
oranges to open oil cells. i Boil
whole in water fifteen minutes
Pick the fruit with fort, Put in
syrup made of 2 cups of sugar
and 4 cups of water and boil till
clear.Ttemove fruit and cut into
sections taking out the seeds. Add
1 cups of water and 2 cups
sugar and boil 10 minutes.! Add
8 drops each oi ou of cinnamon,
and oil of cloves and pour over
1 the fruit Set aside over night
Second day: Pour off syrup, and
to it add 1 cup sugar and the
juice of half a lemon. Boil 10
minutes. Pour over; fruit and let
stand 24 hours. 1 ,i . !
Third day: Pour off syrup 'and
boil it 10 minutes. Pour over fruit
and Jet stand 24 hours. 3
Fourth day: Pour off syrup and
boil .ten minutes. Place sections
I together to look like whole fruit
Place in jars, cover with not
syrup and seal. More oil flavoring
I may! be used if desired. ,
