ors, Beth Bailey McLean, and
Thora Hegstad Campbell, have
combined their years of experi
ence with a large meat packer
and their cooking skills into this
single volume. It is indeed "com
plete." Noti only do they give
recipes for ! the most succulent
meat dishes, but pointers on how
to buy meat and how to cook and
carve to obtain the greatest re
turns. Their recipes include ev
erything from a simple roast to
casseroles, sauces, soups, salads
and the like.
This recipe for Ham and Fruit
Stuffing Casserole, for example,
will whet the palates of your
entire family. It's different easy
to make and may well become
one of your family's favorites. It
includes such simple ingredients
as ham. honey, spices, fall fruits
and toasted enriched yeast-raised
bread crumbs.
HAM! AND FRUIT
STUFFING CASSEROLE
, 6 slices baked ham (1 pound)
4 cups toasted bread cubes
' ' cup melted butter for
margarine
Vi cup hot water
y teaspoon ground cloves
i cup brown sugar
2 oranges, diced -2
tart tapples, diced
3 cup raisins
. Honey ;
Combine bread, butter, water,
cloves, brown sugar, and all the
fruits. Put into a buttered shal
low baking dish. Top with ham
slices. Brush ham slices with
honey or orange marmalade. Cov
er and bake in a moderate oven
(350) about 43 minutes.
To make bread cubes: Stack 2
slices of enriched yeast-raised
bread and cut into cubes with
a sharp knife. Spread cubes on
cooky sheet Bake at 300 until
toasted. Makes 6 servings.

TROPICAL NUT DROPS
2 cups sifted flour -V
teaspoon soda
1 teaspoon salt
! 1 cup brown sugar
; 4 cup shortening : ..
1 egg .
tablespoons milk -teaspoon
vanilla extract
cup chopped nuts
V cup chopped dates
H cup coconut
Sift together flour, soda and
salt Add sugar, shorening. milk,
egg and vanilla extract Stir to
combine ingredients, then beat 2
minutes. Stir in nuts, dates and
coconut Drop by teaspoon! uls on
greased baking sheets. Bake in
moderate oven (373) 10 to' 13
minutes. Makes about 4 dozen
2-inch cookies.
Rural Care Plan
Receives State Aid.
RALEIGH, N. C. (JP) Young
North Carolinians who want a ca
reer in the medical profession can
get it with the help of the state
if they agree to practice four
years in rural areas.
The Medical Care Commission
has oq hand $300,000 for loans
during the next two years to stu
dents of medicine, dentistry, phar
macy or nursing. The loans cover
up to four years of training and
must be repaid with two per cent
interest
The commission hopes to in
crease medical personnel in rural
sections by the plan.
