If "Poor Boy's Sandwich" is food for the destitute, give us a bit of poverty, tempo
rarily. Here Is the sandwich called by that interesting name. It's French Bread filled
with cream cheese, olives and ham and sliced. Try it for a party sometime.
1 Mexican Rico Has
Nutty Flavor
This Mexican ric has rich
nutlike flaVor which yoa set by

with, browned hamburjer, toma-
. toes and a can of chopped ripe
olives, and bake in a moderately
hot oven until the rice is tender.
i A bit of onion, garlic and chili
powder add to its deligbtfal Mex
ican flavor. Serve a tossed green
salad with this hearty one-dish
main course.
MEXICAN KICE
5 tablespoons cooking oil
1 cup uncooked rice
1 pound ground lean beef
to cup chopped onion
1 minced small clove garlic
2 teaspoons salt
1 tablespoon chili powder
1 cup canned or cooked
tomatoes
2 cups water
1 '(44 -ounce) can chopped
ripe olives
Heat 3 tablespoons oil in skillet,
add rice and fry until golden
brown in color, stirring continu
ously. Remove rice from pan, add
remaining oil, beef, onion and
garlic. Cook and stir until
browned. Add salt, chili powder,
tomatoes, water and rice, and
cook about 5 minutes. Blend in
olives. Pour into casserole. Bake
in moderately hot oven (375
degrees) about 40 minutes or
until rice is tender.' Serves 6.

Stew. But the originator of this
recipe says "First get a loaf of
French bread from your baker9
if you are making a delicious
Poor Boy's Sandwich.
This sandwich is no dainty tea
time trifle but a satisfying man
type dish, complete with all the
crispy crush found only on this
tfpe of bread.
Then, too, this hearty treat for
the family or guests is prepared
in advance, chilled, and sliced as
needed.
POOR BOY'S SANDWICH
1 large loaf French bread
Soft butter
Two 3-oz. pkg. cream cheese
1 tbsp. milk
Vt cup chopped ripe olives
. 2 cups ground cooked ham or
one 12-oz. can luncheon
meat
4 cup diced cucumber
V tsp. salt
y& cup mayonnaise
Slice bread lengthwise, making
S layers. Spread with soft butter.
Mix cream cheese, milk, and ol
ives; spread over first layer. Mix
ham, cucumber, salt, mayon
naise; spread over second layer.
Put three layers together and
wrap loaf in waxed paper. Chill
in refrigerator. Just before serv
ing, slice diagonally into 1" wide j
sandwiches and place on table as
a loaf.

To the whole family even to
the cook an ideal breakfast
means flapjacks. They're fun to
fix, exciting to serve, and, if. the
pancakes are good pure heaven
to eat.
Our grandmothers were pretty
smart when it came to making
flapjacks. They used old-fashioned
"country-soured" milk and
baking soda to give them a light
ness and tenderness unsurpassed.
Today, we can duplicate their
fine fluffy flapjacks by using
sweet milk, vinegar, and baking
soda, in a tested-foModay recipe.
Here it is and right with it, how
to make that summer delight,
blueberry pancakes.
FLUFFY FLAPJACKS
2 cups sifted all purpose flour
1 teaspoon baking soda
3 tablespoons sugar
teaspoon salt
2 eggs, well beaten
V cup vinegar
1 cups sweet milk
V4 cup melted shortening
Sift together flour, baking soda,
sugar and salt. Combine eggs,
vinegar, milk and shortening and
mix well Add to dry ingredients
and mix only until smooth. Pour
batter from tip of large spoon or
from pitcher onto large frying
"pan or griddle. When ' underside
is browned and before bubbles
burst on top, turn and brown
second side. Blueberry Pancakes:
'Add Vx cup well-drained blue
berries to above mixture and
bake as directed.
Stuffed Peppers
Second-Day Meat
Leftover meat is an important
asset in the hands of an ingeni
ous cook. For example, here's a
clever way of making tempting
use of cooked roast beef. Its
ground, then combined with rice
and certain seasonings and used
as the stuffing for green peppers
cups.
STUFFED GREEN PEPPERS
2 cups ground cooked beef
6 medium green peppers
Vt cup milk or meat tstock
1 teaspoon salt
2 cups cooked rice
V teaspoon paprika
2 tablespoons grated onion
x teaspoon pepper
Remove tops and scoop out
peppers. Simmer peppers 5 min
utes in salted water. Mix remain
ing ingredients thoroughly, stuff
the peppers with this mixture.
Place peppers in a baking dish
and pour about i cup of hot
water around the peppers. Bake
in a moderate oven (350) for 45
minutes, or . untilthe meat mix
ture is lightly browned. 6 servings.
Double Deckers
Make Good Eating
This double-decker is guaran
teed to satisfy your teen-ager's
ravenous appetite. On one layer
goes a rich combination of avo
cado and ripe olives, on the other
a pimiento and cheese mixture.
It s a real Dagwood, and one the
whole family will ask for often.
HEARTY OLIVE
DOUBLE-DECKER
1 avocado
2 teaspoons lemon juice
cup chopped ripe olives
Pepper to taste
4 cup ground American
cheese
Va cup chopped pimiento
1 teaspoon prepared mustard
Mayonnaise
Buttered bread
Cut avocado into halves and
remove seed and skin; mash fruit
to a pulp. Blend with lemon juice,
olives and pepper. Blend together
cheese, pimiento, mustard and
sufficient mayonnaise to give
spreading consistency. Sprend 5
slices bread with olive mixture
and 5 slices with cheese mixture.
Arrange in double-deck fashion
and top with third slice of bread.
Cut into triangles to serve. Makes
5 sandwiches.
MAKE PATTIES
Baked beans combined with a
beaten egg and fine dry bread
crumbs make good bean patties
Brown on both sides with a lit
tle hot fat

The pressure cooker people suggest ihis method which takes but 10 minutes. Heat cook
er, add 1 tablespoon fat Brown in cooker, 1 pound round steak, diced; Vx pound lean
pork, diced; Vx pound lean veal, diced. Season with salt, pepper, 2 large onions diced,
and 2 tablespoons chop suey sauce. Add 1 bunch celery, diced, and liquid from 1 can
Chinese vegetables. Place cover on cooker. Cook 10 minutes at 15 lbs. pressure- Quick
cool. Add Chinese vegetables and 1 can bean sprouts and butter to meat Heat in open
cooker. Serve over fried noodles or with steamed rice.

chewy raisins, oats and cinnamon
are some of the good makings
that go into - the easy-to-make
drop cookies. . . - . .
FAVORITE RAISIN COOKIES
1 cup seedless raisins
cup shortening . I
1 cup granulated sugar
2 eggs V i
Va cup milk 1
1 cups quick-cooking eats
IVi cups sifted all-purpose flour
- 1 teaspoon soda .
teaspoon salt . i.V
1 teaspoon cinnamon
Bince raisins in hot water and
drain. Cream shortening with
sugar. Blend in beaten eggs and
milk. Stir in oatmeal and raisins.
Sift flour with soda, salt and cin
namon, and add to creamed mix
ture. Beat thoroughly. Drop by
spoonfuls onto greased ; cooky
sheet Bake in moderate oven
(350 to 373 degrees F.) 12 to 15
minutes. Makes about 3 dozen
cookies. . i

Youngsters like the combina
tion of peanut butter and raisins
for sandwich filling. Just as pop
ular are peanut butter cookies
with plump seedless raisins add
ed to the batter before : baking.

MAKE SURE
In order to make paint stains
easily removable from the hands,
rub them with Vaseline petro
leum jelly before starting the
paint job.
Two Dishes Begin
At Bakery Store
Something to talk about a
salmon salad loaf. It comes to the
summer party. Scoop out the cen
ter of a loaf of bread leaving one
half inch side walls and bottom.
Fill with your favorite salmon
salad. Spread outside of loaf with
the following mayonnaise mix
ture. Soften one tablespoon plain
gelatine in one tablespoon of
vinegar and dissolve over hot
water. Slowly combine dissolved
gelatine in mayonnaise. Add Vi
teaspoon cayenne pepper and H
teaspoon Worcestershire sauce.
Spread, mixture over loaf and
garnish with slices of hard cooked
egg. Refrigerate 12 hours before
serving. Yields 8 servings.
Treat yourself to an easy des
sert for hot days in late summer.
Try the new-fashioned orange
gingerbread. Blend cream cheese,
orange juice and grated orange
rind. Serve over warm ginger
bread. Gingerbread purchased at
the bakery may be slipped into
a hot oven until warm.
