Mincemeat comes to the rescue in summer when it appears in this interesting ice
box dessert. Here is the way the Whipped Mince Cream in the picture is made. Break
contents of a package of condensed mincemeat into small pieces and place in a sauce
pan. Add V2 cup water and heat. Stir until lumps are thoroughly broken up. Bring to
a brisk boil and cook one minute. Cool. Arrange halved lady fingers in sherbet glasses,
four halves in each of 6 glasses. Fold mincemeat into 1 cup cream whipped and pile
in the sherbet glasses. Chill.

FILLED TOMATO SALADS
1 cup ripe olives
6 medium-sized tomatoes
Celery salt
1 (3-ounce) package cream
cheese
3 tablespoons chopped sour
pickle
2 tablespoons mayonnaise
1 tablespoon lemon juice
Vx cup flaked tuna
Salt
Pepper
Paprika
Greens for garnish
Cut olives into large pieces.
Hollow out tomatoes slightly.
Sprinkle tomato shells with cel
ery salt and drain cut side down.
Chill. Blend together cheese,
pickle, olives, mayonnaise, lemon
juice and tuna. Season to taste
with salt and pepper. Fill toma
toes with cheese-tuna . mixture
and sprinkle with paprika. Serve
on garnished salad plates. Serves
6.

1 (7-ounce) can tuna ,
1 cup milk
1 egg
. V4 teaspoon rnonos odium
glutomate
' 2 tablespoons finely chopped
green pepper
cup salted peanuts, toasted
Empty contents of rice pack
age into saucepan. Add . water,
salt, and the Y- teaspoon mono
sodium glutomate. Mix until all
rice is moistened. Bring quickly
to boil -over high heat, uncov
ered; fluff rice once or - twice
with a fork.' Cover and remove
from heat; let stand 10 minutes.
Add remaining ingredients ex
cept .peanuts; turn into 1 -quart
casserole. Cover; bake in mod
erate oven (330 T.) 23 to 30
minutes or until heated through.
Uncover; sprinkle with hot
toasted peanuts just before serv
ing. Makes 5 to 6 medium serv
ings. ; v

IVi cups blueberries would be
the right amount for a better
recipe using lVa cups flour. Save
the largest luscious berries to
sprinkle on top. ;
Meat1 Loaf Takes Meat . Spaghotti
'An interesting jellied meat
loaf Includes a surprise ingredi
ent, spaghetti.
ASPIC MEAT LOAF '
4 ounces elbow spaghetti
1 envelope unflavored
gelatine (1 tablespoon)
Y cup cold water
1 tablespoon fat or drippings
M pound ground beef
2 tablespoons chopped onion
1V4 cups tomato Juice
1 teaspoon salt
1 teaspoon Worcestershire
sauce .
Yk teaspoon horseradish
Cook spaghetti in boiling salt
ed water until tender (about 7
minutes).' Drain and rinse in cold
water. While spaghetti is cook
inff. soften relatine in cold water.
Melt fat or drippings in heavy
skillet Add ground beef and
onion and brown welL Stir in
tomato juice, salt, Worcestershire
sauce and horseradish and bring
to boiL Add softened gelatine,
mixing until well blended. Fold
in spaghetti. Pour into greased
4ttx8Va-lnch loaf pan. Chill in
refrigerator until firm. Top with
sauce , made of mixture of salad
dressing and chili sauce.
Makes about 4 servings. ,

when using waxed paper to roll
out pie crusts, wet the surface of
your work table and place the
waxed side down. The paper will
stick to the damp' surface.
