For a Rainy Day Peach Canning Soon to Be in Full Swing; Preserve Pickle By MAXINE BUREN Statesman., Woman's Editor Every day now we have new canning activities. The peaches, prunes, tomatoes, cucumbers, watermelons, apples and all other produce is clamoring to be saved for that other rainy day and it must be noticed. First let's look at peaches. Personally, we would not give up any canned peaches for all the fresh or frozen ones on the market Our favorite winter fruit, if it weren't for prunes, apples, pears, cherries and apricots, peaches must be canned as well as frozen and eaten fresh in our hoursehold. Same old techniques hold true this year as in the past for peaches. Scald to peel, unless easily hand-skinned, halve and pack in jars, process in hot water bath for 20 minutes. Peach chutney is an old-time meat relish, spicy and well seasoned. PEACH CHUTNEY 4 quarts cubed peaches k cup finely chopped onion y pound seeded raisins 2 ounces fine cut ginger 1 cup vinegar Heat fruit and vinegar until steaming, add other ingredi ents and cook slowly until thick. To pickle peaches do this: PICKLED PEACHES 1 quart vinegar 1 tablespoons ground cloves 6 pounds sugar Piece of ginger root 12 pounds (6 quarts) fruit Stick cinnamon Make syrup with sugar and vinegar, adding a spice bag of the cloves' and ginger, and adding A of 5 sticks cinnamon to the syrup. Add fruit, few at a time, and cook until done. Pack into jars. Add more fruit to syrup. When all fruit has been cooked, pour the boiling syrup over them and close the jars. Process in water bath for 20 minutes. A reader phones that she makes excellent peach jelly this way utilizing the skins peeled from the fruit (Scald-peeling would not yield enough "good" to be profitable. ) PEACH SKIN JELLY Put skins and seeds of peaches in pan as they are taken from the fruit barely cover with water and cook 8 to 10 minutes. Drain off juice and use with commercial pectin according to the recipe on the bottle or package. Sometimes she replaces the pectin with green apple juice.
