A survey intended to : aid
Marion County restaurants In im
proving health conditions was
completed this week by sanitari
ans of the Marion County Health
Department
Conducted in cooperation with
the State Board of Health the
eurvey found more than 50 per
rent of the county's restaurants
are not taking proper care of
eating utensils and that the bac
teria count on many items tested
was over the minimum standards
of the Board of Health.
The purpose of the check,
which is conducted annually, "was
to assist restaurant managers in
evaluating, and possibly improv
ing, their dishwashing, handling
ana storage techniques," Sanita
rian Bill Hellie said. "The ; re
sults," he said, -will aid health
officials in educating restaurant
personnel in the Job of proper
sterilization ana care of uten
tils."
This does not mean, he said,
that the eating places which were
below standard in care of uten
sils would be barred; from busi
ness. "Actually the vast majority
of restaurants are still cleaner
than the average kitchen at
home, he said.
Teach Cleanliness
"Our purpose is to show man
agers how they, can increase
cleanliness and crevent mnw
cases of food poisoning which.

"But," Hellie added, -we make
regular, more complete checks of

Nellie said the survey indicated
the need for a greater effort on
the part of the food service in
dustry to check on their water
temperature (170) in machine
dishwashers and to use proper
chemicals if washing is done by
hand method. J

Hellie and two other sanitari
ans, Bill Green and I. fe. Lermon,
visited tne restaurants, making
sample tests irom cups, glasses
and silverware. The samples were
tested at the State f Board of
Health's mobile laboratory sta
tioned nere. if a culture of bac
tena developed, a couit was tat
en. One hundred wasl the mini
mum safety point, while some
counts were estimated! at 23,000.
"One careless fingerprint on
the lip of a glass cquld mean
countless bacteria," Hlellie said.
In addition to inspecting eating
piaces, the sanitarians also check
the Willamette River had other
places for health conditions.
