Not only are the readers more interested, come a change in the weather, but there are more things in market to talk about. The spring season hits us quickly all at once there are fresh young vegetables in the market, if not locally grown yet, at least with encouraging green and red color. Spring salads take their place on the menu, lettuce chunks with Thousand Island dressing, tossed salads of slightly anemic tomatoes, bright radishes and healthy looking green onions. Perhaps you've a few plants of parsley left over in the gar den, waiting to be dug under. If so, here's a recipe to use the roots. We've heard of celery root, of course, and parsley tops, but this calls for parsley root. We. won't vouch for the recipe, but it comes from the chef of a famous mid-West hotel and he thinks it's good.
