Though the ice cream lopka Hch, it-requires light cream instead of whipping cream, thereby cutting down calories as well as cost. I f CHOCOLATE CHIP ICE CREAM ; j 1 ,rennet tablet Vi cup sugar i I j 1 tablespoon cold water 4 square bitter chocolate 2 cups light cream (grated) f I egg Vi teaspoon vanilla' extract Dissolve rennet tablet by crushing in cold water. Mix egg and 'sugar with cream. Warm cream mixture slowly until lukewarm, stirring constantly. Test a drop on inside of wrist frequently. When it feels comfortably warm (110 F.) not hot, remove at once from heat. Stir in dissolved rennet tablet quickly lor a few seconds only. Pour at once, while still liqiud, into refrigerator tray Do not disturb for about 10 minutes, while cream sets."; Place in freezing compartment and freeze until firm. Remove from tray to bowl, break up with fork or potato masher and beat with rotary beater until free from lumps but still a thick mush.f Fold in flavoring and grated chocolate.
