MAPLE BLANC, MANGE : 3 tablespoons cornstarch i teaspoon salt ' i cup sugar . 14 cups milk ! .'.j ' cup maple syrup . . .' . 2 egg whites Combine cornstarch,' sugar and ; salt and mix to a smooth paste with a little of the! milk. Scald remaining milk. Add cornstarch mixture gradually to hot milk. stirring constantly. Add-one-half " cup maple syrup and cook over hot ' water , until , the pudding ' thickens stirring constantly. Cook 15 minutes longer without stir- ' ring. Remove from stove and - fold in stiffly beaten egg whites. - Pour into molds and chill.
