the Eastern Star met in Masonic
temple Tuesday night with mem
bers of Ramona chapter of Sil
verton, as special guests. The
hall was decorated with baskets
of daphne and forsythia.

tron opened the meeting after
which the officers of Ramona

Mrs. Marshall Monroe, mem
ber of the staff of the national
board. Young: Women's Christian
Associations, New York City,
will arrive in Salem, Friday, to
confer with committee members
on the financing of the program
of YWCA work in this country
and abroad, now greatly expand
ed. :
' Mrs. Monroe was elected a
member of the national board in
1928, served as chairman of the
national student council, and
Joined the staff of the national
board in 1839 to fill her present
position In the department of
interpretation and support
Her interest in the YWCA be
gan as a Girl Reserve in Phoenix,
Arizona, and continued as a stu
dent 'member of the YWCA in
Stanford university, of which she
Is a graduate. 1 Mrs. Monroe liv
ed in New York for many years,
in France and Spain for one year.
Since 1941, her home has been in
Phoenix, Arizona.
Mrs. Monroe has also been as
sistant finance secretary to the
national society, for the preven
tion of blindness, and has done
research for the National Indus
trial S Conference . board on ag
ricultural problems.
Locally the visitor will meet
with' the Salem Council of So
cial agencies and the YWCA.

Green and Yellow Vegetables
Needed in Average American Diet

We Americans have been found deficient in vitamin A, that mys
terious little ingredient that helps the eyes adjust themselves quickly,
aids so much in resistance to infection, promotes growth and is a good
all 'round good health enthusiast ? -
Vitamin A certainly should not be lacking in Oregonians diet,
what with the markets full of fresh vegetables, Just begging to he
invited to dinner. .
Butter which contains vitamin
A is of course something special,
but green and yellow vegetables
may beservdd frequently on the
"table to provide the necessary
Ingredient with no expenditure
of ration points.
Such vegetables las broccoli,
spinach, carrots, Swiss chard,
kale and other greens, sweet po
tatoes and even good old winter
squash will help along in get
ting the necessary quantity of
vitamin A. 1 ,
Speaking of vitamin A, here's
something to make the eyes
bright:

SWEETC POTATO-SPINACH
' CROQUETTES
t cups mashed sweet potatoes
t tablespoons melted butter
or substitute
4 tablespoons scalded mule
Dash of pepper, k
i teaspoon salt '' j
1 cup cooked spinach
Fine cracker crumbs or corn
flakes
,.t eggs slightly beaten -
2 tablespoons cold cold water
Add melted butter and milk
to the potatoes, season and mix
well. Make croquettes, filling
the center of each with a little
spina cn. Roll In cracker crumbs
then in egg beaten with the wa
ter and roll again in crumbs. Set
aside to chill. Fry In deep fat
and dram on paper or make into
flatter cakes and fry. in shallow
fat
Apples and cabbage will make
another dish to pep up the defi
ciency diet
Shred a small head of cabbage.
2 apples and an onion together,
cover and cook until done, add
ing a dash of butter, , salt and
pepper, 1 tablespoon sugar or
more, M cup vinegar a little be
fore done.
Here's a way to make squash
the main dish, with Just a little
assistance from bacon.
SOUFFLE OF SQUASH
WITH BACON
Bake Hubbard or marblehead
29.75 to 119,50
squash, run through a sieve.
Make a sauce by melting 2 ta
blespoons bacon fat or butter,
adding 2. tablespoons flour and
. gradually addficur 4 cup milk.
When cooked. add 1V4 table
spoons salt few grains , pepper
and add the hot mixture to three
beaten yolks, stirring until
smooth. Now fold in beaten
whites, fold in 1 cup squash
pulp and bake at 300 degrees in
a greased baking dish for 45
minutes; '.. J.
; Arrange bacon on top as It
comes from the oven.
