a recipe gets in the paper wrong.

- ripe for our. best friend's yeast
bread, and . then left out the
yeast That's something like the
: time we put in a recipe for can
dy that used a drop of glycer
ine and got a "cup of glycer
ine out of it, and the time we
wrote up a formula for jellied
bridge salad with no gelatine.
Let's . just ! hope that 1 reader
friends don't "rise up against
us in wrath at trying out a yeast
recipe without yeast,' and that
this affair doesn't spoil a beau
tiful friendship between me and
the one whose recipe it was.
Anyway, we repeat, here's
.recipe for yeast bread, .which
turned ' out to take two lessons
to learn instead of one, but will
' produce a good yeast bread in
the most painless process pos-
"' sible: ' ' -
. IJLA'S TEAST BREAD
Cook a medium sized potato,
t and when done, mash through
a fine sieve, add enough water
to make a quart of, liquid (in
cidentally to cool off mixture to
' lukewarm). Crumble, up a cake
of yeast into this, add 1 table
spoon sugar , and" flour (prob-
ablyJ around 1 cup) whip with
the egg beater , and cover bowL
Let stand for around two hours
or less, until frothy. Then add
1 tablespoon shortening (melt
ed), salt and enough flour to
make the right - consistency,
"kneading the flour Into-dough.
Put back into bowl, grease the
top and let stand for about two
- hours in a warm place until
" doubled in bulk. Throw dough
on board, work into four loaves
and put into pans, let stand un
, til doubled in bulk again, bake
at 375 degrees for about, an hour.

JEFFERSON Funeral services
were held at the Jefferson Meth
odist church for Mrs. Charles S.
Emry 80, who died September 27
at a Salem hospital. Rev. N. Sher
man ' Hawk, pastor of the local
Methodist church officiated. Mu
sic was furnished by Mrs. Leonard
McCaw and Mrs. C. J. Thurston.
Bearers were Frank Fuqua of
Portland; Tom R a midell and
Manley Ramsdell of Canby; Jack
Cowdrey of Boise, Idaho; , Ray
Haines of Melino; and Clyde Rob
inson; all. relatives of the deceas
ed. Interment was in. the River
side cemetery, Albany, with the
Howell-Edwards Funeral home In
charge.
