half minced onion and 1 beaten egg. Corer wttn
A crumbled crackers with small pieces of butter
en top. Bake tin onions are tender.
WARRENTON ESCALLOPEO CLAMS
- Drain X eaa Warreaton Minced Clams. Make a
' White sauce of X tablespoon of butter, 3 tablespoons
of flour and 1 cup of cream, remove from the fir
and add 2 wall-beaten egg yolks, salt, pepper, i
tablespoon chopped parsley, 1 tablespoon lemon
juice and the dams. Fill small well-greased rame
kins wltbrthe mixture, sprinkle lightly with bread
crumbs, dot Vita butter, arrange ia a baking paa
and brows seven minutes ia a not even, 400 de
grees IT. ...
WARRENTON CLAM POULET
Drain 1 can Warren ton Minced Clams, reserving
liquid. Melt J tablespoons butter in top of chafing
dish or double boiler. Add 3 tablespoons flour, ft
teaspoon salt, teaspoon pepper and teaspoon
paprika and stir together, Gradually add liquid
drained from clams and 1 cup mil it and stir con
stantlr until thick and smooth. Add clams, S sweet
pickles. 1 bard-cooked egg and 3 pimientos finely
diced. Serve very hot on slices of buttered toast.
WARRENTON CLAM PIE
3 cans Warrentoa Minced Clams, 1 cup diced pota
toes, 1 small chopped onion, K cup diced carrot,
1 cup diced celery, 1 cup thin white sauce, 1 table
spoon butter. 3 tablespoons minced parsley, salt
and pepper and celery salt to taste. Cook potatoes
carrot, celery together la salted water until soft,'
cook onion in butter until soft and yellow, combine
vegetables. Add 1 cup white sauce and clams. Put
all into a well-buttered dish and cove with plaM
pastry. Bake In a quick oven, 450 degrees, for 15
to ao minutes, or until crust is baked. If desired, ,
the mixture may be served en biscuits.
