was thinking about dates, stuffed
to a fullness with Juicy, nutmeats
and glistening with mounds of
snowy sugar, for these are the
sugarplums of ' today's children
and it wouldn't be Christmas with
out them. Let's start making them
now! " ' " ".
Grown In biblical lands, right
on the site of what was the Gar
den of Eden, dates are linked to
Christmas by tradition as well as
taste.
Since they are as good days la
ter as when they are first, made,
stuffed dates ' may be prepared
well in adrance of the holidays.

Stuffed -Dates
The favorit) stuffings for dates
are: nutmeats, plain; sugared or
salted; fruit paste; fondants; and
marshmallows. To stuff dates, pit
the 10-ounce packages of dates,
being sure to get the pasteuriz
ed variety, or use the ready-pitted
kind. It is usually desirable
to leave a bii of stuffing visible,
although date may be wrapped
entirely around the filling to
keep i; moist. After stuffing, su
gar dates by shaking a few at a
time in a paper bag containing
granulated sugar; or dates may
be rolled in chopped nutmeats
after stuffing. Some new fillings
are:
Fondant (Uncooked) '
1 1-3 cups confectioner's sugar
1 Vm tbsps. butter
1-8 tsp. vanilla or other flavoring

desired ' pastel shade with food
coloring. Flavoring of various
types may , also . be used . such as
rose, almond, peppermint. uit
the coloring to. the flavors used.'
: Chopped nutmeats may be add
ed to the fondant, or a half nut
meat pressed into tbe fondant.
' Orange Peanot Butter
1-3 cup peanut butter ( lb.)
6 tbsps orange Juice
orange rind
Candled orange peel or grated
Add orange Juice slowly to pea
nut butter; mix well. Add
teaspoon, grated orange rind or
a tablespoon candied orange peel.
Stuff dates and roll in sugar or
in finely chopped salted peanuts.
Marshmallow Cocoanot
Cut M lb. fresh marshmallows
Into Quarters with scissors. Stuff
each date with a piece of the
marshmallow, placing cut side
up. Dip sticky surface of marsh
mallows Into shredded cocoanut.
