Salem will have better fire protection. That was decided
at; the election when a special rhillage tax was voted
J And this will eventually result in three additional" fire
stations, north, south and east.
Hilt this' tax' will at first bring only a little over $30,000
a year," and that will not go all the way in providing one new
station, for the land must be acquired, the building erected J
and at least one pumper provided and the pumper will costi
around $16,500. In fact, each new station ought to have
,. aiso a combination chemical engine, and other : equipment.
These three new stations are needed now.! I But it seems
tc be out of the question to get them soon.
Is there not some way to acquire the site for the north
station, at least, and perhaps also erect the building, on a
plan of future payments? And perhaps part of the cost of
t$e equipment, too?
What is in the way of this? :

'The selection of Mark D. McCailister as corporation com
missioner is a good one. He will operate the department
- without an assistant commissioner, which place he has held

cies, and thus increase the efficiency of the office. As assist
ant commissioner he has had charge of the business of the 45
biiilding and loan companies in the state, with $23,000,000
assets, an increase of $3,000,000 in the past year; beside
that pf the outside companies. Mr. McCailister has been
long connected with this office, and he understands every
detail of its duties. He is a native of the state, and one of
lia fine, upstanding men in every walk of life.

Now comes another.- It is apple syrup; better than maple
syrup. The idea comes from the Oregon Agricultural college
arid is in a current bulletin of the departments industrial
' journalism of that institution, and, coming from such an
authoritative source, no doubt good cooks throughout the
country will be trying it out. The idea may conceivably in-

other countries. Here is the idea as set out in the bulletin:
f "Apple syrup is a product of Oregon 'apples resembling
corn or maple syrup in appearance but greatly superior to
them in flavor and palatability. It is made by neutralizing
the acid in fresh cider with calcium carbonate (obtained at
any drutr store) at the rate of five ounces to fourteen gallons
of cider and then boiling, according to the department of
horticultural products at the Oregon Agricultural college.
'; "Action of the calcium carbonate causes ' a precipitate
which is allowed to settle for six or eight hours before the
:2mid is noured into kettles. A teaspoon of calcium carbon
ate again is added and the juice is boiled down to a seventh
of its original volume, when it has the appearance of maple

The product can be poured into either.glass jars or tin cans

year that the Pacific coast wheat
growers will not have to depend
in the future, as in the past, on
the Liverpool market.
