It used to be said that "yoii. cannot eat your cake and
have it too," but that saying was -invented before we knew
so much about sugar beets - i- . V . 5
Most Statesman readers know that the chemical ele
ments of sucrose (sugar) are carbon, hydrogen and oxygen.
The carbon comes from the air and the hydrogen and oxygen
comes from the water-i-that is, sugar comes from the wind
th: ,t blows where it listeth arid the rain that falls from lieaven
on the place beneath. . . I "
Mr. Wilson, in proof, of -his -statement that-"sugar beets
am one of the most profitable of crops," quotes the official
records of the returns per acre of the North Platte, Nebraska,
reclamation project in 1922. The returns are the average
gross returns per acre. Alfalfa hay yielded $13.62 per acre;
beans, $25.03 per acre ; on ions, . $66 per acre ; wheat,1 $14.74
per acre; all the cropk an average of $21.74 per acre, while
sugar beets yielded an average of $34.32 per acre.
