About 3 qta. sifted bread flour. 4 T melted shortening. 4 t salt, j . " ' . ' ' 4 T sugar. 1 pound prunes. ; 3Iethod Wash the prunes carefully, and soak overnight in enough water to cover . Pit and cut up somewhat. Scald milk. Pour it into the mixing bowl, reserving 2-3 c in which to soak yeast. , ; Add the sugar, salt, and melted fat to the milk in the bowl. When lukewarm (80 F.) add about half the flour. ' When the milk in the cup is lukewarm, break in the yeast and add 1 t sugar. Add yeast to batter. Beat well; add enough more flour so that the dough may be put out on the board and kneaded. ' Knead for about 20 minutes, ad ding the prunes and more flour from time to time. The dough should feel springy and free from stickiness when it has been knead ed enough. ; I' i Put the dough in the greased mixing1 bowl, grease the top of the dough to keep it ' from crusting over. Cover the, bowl with jit clean cloth and set the bowl where it will keep warm" ; When the dough has doubled in bulk, knead it down again and let rise a second time until double in bulk.
