Grapefruit sherbet. Boil together 1' 1-2 'cnpfnls of sugar and one cupful of -water, ool. Extract l'l-l eapfuls of grape juice froni fresh grapefruit ana add one uif f ul of mashed, cooked apricots and , one-half tablespoonful of lemon juice. - Mix with. the cold sugar' sirup, pour Into the freezer, and partially freeze- When the sher bet Is of the consistency of a soft mush, open the freezer and fold Into the sherbet one ' eex-wrtilte which has been beaten until very stiff and to which two tablespoon . fuls of sugar hare been added. Freeze until stiff enough to senre. Serre garnished with Maraschino cherries-cut in small pieces. " f To? Banana- sherbet !, combine one cupful of water and oho a!nd one-half cnpfnls of sugar and boll for fire minutes. 'Cool thorough ly. MeanWhile, mash six medium sized bananas or press through a potato Ticer. Cook for 10 minutes, cool and add half a cupful of orange juice and Quarter of. : a cupful of lemon juice. Freeze slowly. - ''":,"' Grape Ice : J , Put one pound of strained hon ey, on quart of water, one pint of grape juice and half " a tea-. spoonful of cream of tartar over the fire and cook tor four min utes, after reaching the boiling polnt When coldi add' another pint of grape juice, the strained juice cf one lemon and freeze. Just -.i toon as the Icq begins to congeal stir in a quarter pint of thick cream, whipped ' solid, and stiffly whipped white' of one egg Continue to freeze untlf tnn-nd smooth. ' ' fm.f-,' - Voiiee Frappe - - Dissolve one cupful of sugar In threa large cupf uls of clear, strong blact toffee and add r few grains of salt and a teaspoonful of gela tine softened in two tablespoon fuls o' cold water.; Cool add one cupful of stiffly whipped cream, half a teaspoonfur of -Vantla ex tract and the stiffly baror white of ono egg. Freeze slowly and serve in sherbet cups, garnished with, mounds of sweetened whip ped cream. Sprinkle with chopped nut meats. - Maple Parfait - Beat the yolks of four eggs un til light and lemon-colored and pour on two 'cupf uls of hot maple sirup.
