ago "kraut matin ' was a common,
ity event, and a time when the young
men of each household carefully
washed their feet and changed socks
so that they might help tramp down
cabbage In the barrel. Today In a
few homes Is sauerkraut made on
such a Urge scale. A keg or an
earthen crock la used as a container
and the packing is done by hand
rather than by foot
The cabbage need not all be firm
and solid, but loose or split heads
may be used. Cabbage too poor for
market can thus be utilised. A com
mon method of making Is to remove
