TJie "Printing Office as a. School.
A corresporiclcnt of the Louisville
Journal, in the course of a series of
interesting remiuisences of an old
connection with, that establish

"For a young man that is not al
together a fool, and who has had
tin1 advantages of an ordinary edu
cation, the printing, oflice is un
doubtedly a capital school of intel
lectual advancement. In regard to
general knowledge, no class of men
rho labor for a living, can ap
mpacli the printer. The studious
among them, if natural gifts be not
below the level of mediocrity, have
equal chances with the members of
the so-called learned professions, to
acquire both worldly honors and

produced eminent men in every pro-
lession and m every walk ot lite.
"A good printer is crenerallv
good critic, not only of lanuae
and punctuation, but of the intrin
sic literary merits of whatever
comes under his hand. It is im
possible that he should be other
wise, since so great a part of his
life is made up, as it were, of facts
that enforce reflection. The labor
that employs his hands, gives to
his mind neither exercise nor care.
His lingers move intuitively to the
exact points for the proper apor
lionment of his work, while his
mind seizes the idea sought to be
conveyed by the writer with whom
he is ena-d,and is only expelled
there from" after his judgemet has
passed sentence on its merits.
Many a one, without knowing
it, possibly owes some unknown
compositor or proof reader much
more of reputation as a writer than
lie would be willing to acknow
ledge. If, by changing the read
ing of a sentence without affecting
its meaning, he can give to it
strength or smoothness, a good
printer asks no question about the
matter,' but changes it at once.
And so, if ethe grammar of a sen
tence is evidently faulty, he would
be considered unfit for the busi
ness, did he not rectify it in this
paticular.

it is true, who could never learn
the plainest rules of either compo
sition or punctuation. To such a
one might be used the identical
byterian, speaking to a young but
particularly silly candidate for
ministerial orders: 'Young man,
you have mauQ, a mistake; -you
have been called to another held
the corn field.' "
The Actual Value of Cows.
The American Stock Jburnal,n
reference to the subject, says
Now, we can go into a dairying
neighborhood, and point to farmers
who are losing from two to three
thousand dollars, by keeping cows
yielding two hundred pounds of
butter per year, instead of those
that would yield from live to six
hundred pounds in the same time.
How many dairymen can tell the
relative value of each cow of his
herd by actual test? There is a lit
tie instrument for this purpose that
don't cost much, but very few dai-
m ml
rymen know anything about it.
It is called a Lactometer, constuct
ed by placing a number of glass
tubes, of equal length and diame
ter, in a wooden frame. The milk
from each cow is placed in some of
these glass tubes ; there they stand
side by side, and you can see the
depth of cream that rises in each
tube, representing a certain cow,
and estimate her value thereby.
Baked Beans. Few people
know the luxury of baked beans,
simply because lew cooks properly
prepare them. Beans, generally
nre not cooked half long enough.

middling sized white beans, two
pounds of salt pork, and one spoon
ful of molasses. Pick the beans
over carefully, wash and add a gal
lon of boiling hot soft water f let
them soak in it over night ; in the
morning put them in fresh water
and boil gently till the skin is very
tender and about to break, adding
a tea-spoonful of saleratus. Take
them up dry, and put them in your
dish, stir in the molasses, gash the
pork, and put it down '"in the
dish, so as to have the beans
coverall but the upper surface
q turn in boiling water till the top is
just covered ; bake with a steady
lire four or live hours. Watch and
add more water from time to time
as it dries away.
To Make Cueaji Ciikeso. The
following are two recipes: Take
a quart of cream, or, if 11Gt desired
very rich, add thereto one pint of
new milk ; warm it in hot -u-ntnr
till it is aoout tne heat of milk from
the cow; add a small quantity of
rennet, a table spoonful is sufficient
let it stand till thick, then break
it slightly witli a spoon, and place
it in a frame in which you have
previously put a lino canvass cloth ;
press it slightly with a weight ;
let it stand a few hours, then put a
finer cloth in the frame ; a little
powdered salt may be put over the
cloth. It will be lit for use in a
clay or two.

Another Method. If cream is
scarce so that a sufficient quantity
cannot be Baa at once take a tine
canvas bagj pour as much cream
as you may happen to have into it,
adding additional small quantities
twice a day, and from its becom
ing naturally fon the thin part
win arain through the canvas, ana
Uie remainder will prove an excel
lent cheese. If one quart of cream
can all at one time be poured into a
fine canvas bag, it will make a nice
sized cheese, and of course equally
as good as those made by several
small quantities aded at convenient
intervals. The cheeses made in
this -way arc not fit for use so soon
as those made with rennet.

FbiedVeal Cutlet. Take half
a pint of milk, add a well beaten
egg, and flour enough to make a
batter. Fry the veal brown in
sweet lard, then dip it in the batter,
and fry again till brown. Drop in
some spoonfuls of batter, to fry af
ter the veal is taken up, and put
them on the top nf tho veal. Then
put a little thin flour paste into the
gravy, adding salt and pepper, and
ntror nnft hoi . nour it overiue
whole. The veal must be cut quite ,
thin, mid it should cook nearly an
hour in the whole.
Dougii-Xuts :not " Greasy."
Here is an " invention " which we
might "patent," but being employ
ed "to labor for the public, that pub
lic is entitled to our entire "ser
vices." Everybody and his wife
and particularly his little folks
love the good, old-fashioned dough
nuts. But many persons are troub
led with "weak digestions," (dys
pepsia,) and the large amount of
lard or grease absorbed by the said
dough nuts does not always "sit
well," but produces a " rising in
the stomach." When this is the
case try our invention. The tlonerh
nuts being prepared as usual, just
before immersing them in the hot
fat, plump them into a well-beaten
egg. This will give a thin coat of
albumen which will keep out grease
effectually. Fm theimore.this coat
mg will retain tho moisture, and
make them keep in good condition
much longer than if not so treated.

THEIR BONDS for the same. This notice
is also intended to apply to the successors t
the right of Dr. Johu McLaughlin, to have
seventy four lots reserved from the operation
of said McLaughlin's conveyance to the coun
ty. The County is ready to convey the same
upon proper selection and proof.
