Hired " Help" in California.
The Sacramento Bee, in commenting
upon the indisposition of servant girls
to leave the cities, and of the airs put
on by them' when they have situations
cither in tovm or country, makes the
following very just and sensible re
marks :
. The fact is, a great many people,
both women and men, who are looking
for work don't want it. They are not
nnxiou3 to work when they have it, or
to keep places when they obtain them.
Numerous wives able to hire help
tirefer to do their own work rather
than have in the house with them
girl3 who will not strive to do
anything tidily, and if spoken to on
the subject and shown how to do it,
toss their heads in disgust and talk as
if they were not the servant, but the
mistress ! And this is one reason
why many families who ought to have
and can well afford to have girls are
obliged to do without them or take
the next best substitute that offers,
which is a Chinaman, The reason
that Chiuamcn are supplanting girls
in household work is not because any
one prefers the Mongolian to the Cau
casian for such is not a fact but be
cause it is a necessity to have the
work done, and but too many girls
either will not do it, or do it in such
a way as to keep the house in an up
.roar and the inmates in a fidget all
'the time, whereas the Chinaman will
do as he is told, the mistress is not
afraid to instruct bim or to order him
to do this or that he gives no trouble
to anybody, but aoes his work, gets
money, and there is an end of it.
Families want peace in their homes,
and there is more of it, they say, with
Chinamen than with girls; although
as a general thing, that family is best
OB that is not obliged to have either.
Butter Txiat Will Keep. "We
Lave seen the statement that a dairy
in uroome county, isew lorn, was
sold in St. Croix, in 1839, to the
Governor, for 75 cents per pound
In 1840 the same diary was sold in
New Bedford, Massachusetts, and
went on a whaling voyage. I saw
some of it .after the expiration o!
ncariy xour years, as sweet ana in
good condition as when made. The
surae dairy has since been solJ in
New Orleans, in Natchez, and Mo
bile, and there has never been any
complaint as to its quality. I ship
ped some butter made in that county
to Cunton, in 1846, which opened as
fresh as when made, and was so good
-that shippers have each year since
applied to me for butter for cabin
,'stores. I broke up the firkins, and
procured small white Oak kegs con
taining from fifteen to twenty-five
pounds each, repacking the butter,
-lhese kegs were put into large hogs
'heads and filled in the interstices with
rock salt, and placed in the hold o
ine vessel, lue small kegs were
used merely with reference to the
convenience of retailing at Canton.
Orange county butter is now under
stood to have reference to the mode
of manufacturing rather than to the
locality ' where made. In making
this butter the milk is churned and
reck salt is used. If every butter
maker in the United States would
, learn and practice this method of
making butter, it would be worth
$75,000,000 a year to the agricnlture
ofibe nation. More than this amount
is wasted every year by stupid butter
makers. Behold how profitable are
good sense and a small increase of
.useful knowledge.
If every horticolturalist and far
mer would tbink for a moment on tue
nat ure of fallen leaves which con
tain not only the vegetable matter,
.but the earthy salts, lime, potash, etc.,
needed for the next season's growth
and fertility and that, too, exactly in
the proportion required by the very
tree and plant from which they fall ;
nay, more, if they would consider that
it is exactly in this way, by the de
composition of these fallen leaves, that
nature enriches the soil, year after
year, in her great forests, it would
hardly be possible for such a reflect
ing horticulturalist or farmer to al
low these leaves to be swept away
by every wind that blows, and finally
lost altogether. He would rather
collect, from week to week, the leaves
that fall under each tree, and by dig
ging them under the soil about the
roots, where they will decay and pro
vide in the cheapest meaner possible
food for that tree. If this plan should
be tried we 6hould not see old or
chards dying out for want of nourish
ment ; but they would, in this simple
manner, receive all the enriching they
required. Tear trees, and doubtless
the peach, would be greatly benefitted
by this procedure. In certain vine
yards in France and Italy, the vines
jsue kept in the highest condition by
simply burying at their roots every
leaf and branch that is pruned off, or
falls from the vines at the close of the
season. Will not some of our .far
mer's of inquiring minds give this sim
ple proceps a trial this season 1 It is
'a well known fact that no manure is
more eagerly sought for by the florist

meat.she wishes to keep a few days,
that it can be successfully done by
placing it in a disb, and covering it
with milk. Sour milk or buttermilk
will do as well. I have practised the
plan for years."
A correspondent of the American
Institute Farmer's Club gives the foK
lowing explanation of the names of
Timothy and " Ilurd's" grass : He
says it was called foxtail in England,
and was brought from England to
Rhode Island by Timothy Ilurd. The
Quakers called it Timothy grass, and
others Ilurd's grass.

onshire, England, from which they
take their name. This breed is one
amoDg, if not the oldest of the im
proved English cattle, and until the
rescnt century, was bred with
greater purity than any other breed.

"The Gang Plow made by J. C. Pfcil,
Arenzville, Cass county Illinois, is received
with no little favor in the west. Almost in
credible stories are told of its excellence
and efltciency in plowing the prairie lields
of Illinois and other States.
The depth of the furrow is regulated by
the crank-axle, which is so arranged that
the ploughs can be driven deeper or shal
lower at the pleasure of the driver, when the
team is moving, by means of the lever.
We also manufacture, sulkey plows for
small boys, or infirm pervons who-are uuablc
to manage a team of three or four horses.
This gang or sulkey plow, will cut a fur
row from a to 10 inches deep.
" The committee who tested the draught
of this plow with a dj-namonieter state, that
it ran lighter by 14 p"ounds,than other plows
when running at the same depth, and held
by the plowman while on foot."
