Description of an Interesting Trial in an
Indian Court.
Justice is the end of government,
and every nation has its own peculiar
method by which this end is achieved.
In "Our Future Highway to India" an
interesting trial is described. There
had been a riot and one. man had been
hurt- The ringleaders in the riot, were
now put on trial, and a durious sight it
was. .
The cadi and" council were seated
round a table. An officer called the
"kaimacan" had conducted us to the
place where the trial was going on,
and the party was accommodated on a
divan. The prisoners were brought in
under strong guard, the wounded man
and the idoctor being at the other end
of. our divan. The whole place was
crowded with witnesses and specta
tors.
f A more peculiar trial was never seen,
every one gesticulating, shouting and
yelling. The prisoners abused kaima
can, cadi, court and everything else,
and were abused in turn. The noise
went on increasing .till it seemed as if
the roof was about to fly off.
Suddenly there would come a lull and
every one, prisoners, guards and all,
would commence smoking cigarettes.
The ringleader in the riot coolly took
a light from one of the 'members
of the court. After a pause, and with
their lungs refreshed by the soothing
fumes of tobacco, they would all again
burst forth in chorus, and the noise
would be worse than before.
I know not .how the clerk to tbe
court managed to keep his notes of the
evidence, but perhaps . he was accus
tomed to such .scenes, and managed to
take down a fair description of what
had occurred.
Though there was fresh blood on
their clothes, and some long hairs were
sticking to the sword of the one who
had actually struck the blow, the pris
oners swore they were innocent. Luck
ily the case did not rest on frail tes
timony, as an officer had been present
and seen the man cut down. So far
everything went to convict the cul
prits, but the question of provocation
given and received had to be debat
ed before the punishment could be
awarded.

perstitious, and has a great respect for
talismans. Among his many posses

with him when he travels a circle of
amber, which fell from lleaven in
Mohammed's time, and which renders
the wearer invulnerable; a casket of
gold, which makes him invisible at
will; and a star, which is potent to
make . conspirators instantly '- confess
their crime.

ABOUT SAUCES.
A French Cook's Treatise Cpon Sis Chosen
Art and Profession.
"Man has created- the culinary art;
he does ' aot eat - like an animal, he
breakfasts, dines and snps." With this
quotation the author of a very serious
French treatise upon cooking begins
his book. He is particularly eloquent
on the subject of sauces. "Cooks re
cognize four great sauces," he says.
"These are the foundations of all
others. They are Spanish, "Veloute,
Bechamel and German. The Spanish
and Veloute were known in the seven
teenth century, and-were modified in
the eighteenth by the great masters
(cooks) and by Careme, the Raphael of
the kitchen.
"The Spanish is composed of juices
extracted from a mixture of ham, veal,
chicken and pheasant. Veloute is
similar, but is not colored.' Bechamel
is Veloute to which cream has been
added, and the German sauce is Veloute
to which yolks of eggs have been
added."
After telling how to prepare these
the author discusses the "Theory of
Sauces." Certain writers, it seems,
have condemned the use of thickening
of browned butter and flour in meat
sauces. He contradicts them emphat
ically, and quotes Careme, who says,
severely: "Now, I ask the writers of
these ridiculous books in what respect
butter mixed with' flour is corrosive
and incendiary? But of what conse
quence are these ignorant men? Let
them blunder on; let them continue to
disgrace their profession.
- "Sooner or later an enlightened prac
titioner will arrive, one who will un
veil the evil of charlatanism. He will
avenge science, and will cause them to
disappear from the face of the earth."

William H. Mills, of San Francisco,

Bayard Taylor's Home.
'Kennett Square, Chester county,
Pa., where Bayard -Taylor was bred,
where his home, Cedarcroft, was and
where a library is to be established as
a monument to his memory, is a vil
lage of about thirteen hundred inhabi
tants. The region has a strong Quaker
element, and the pride of Mr.- Taylor's
neighbors in his literary distinction
was tempered by what they esteemed
his worldliness. It was known that
he lived much as other men of -the
world lived and that he drank wine
and smoked cigars. The good people
of Kennett Square decided once, how
ever, to forgive all this and welcome
Mr. Taylor home in triumph, but many
of those present at the reception were
shocked by the address of a speaker
from another state, who praised th;
honored gnest of the occasion for hav
ing freed himself from narrowing
trammels and lived the larger life of
the great world. '

By order of the Common Council of
Dalles City, made and entered on the 3d
day of April, 1894, notice is hereby given
that said City Council is about to pro
ceed to order and make the improvement
of Eighth street in said city, as herein
after stated, and that the cost of such
improvement will be levied npon the
property adjacent thereto, and said im
provement will be made unless within
fourteen days from the final publication
of this notice, the owners of two-thirds
of the property adjacent to said street
about to be improved shall file their re
monstrance against such improvement
as by charter provided. The improve
ment contemplated and about to .be
made is aa follows :
To improve Eighth street in said city
by building a sidewalk six feet wide on
the south side thereof from Pentland
street to Court street. Said sidewalk
shall be built, constructed and erected
in accordance with the provisions of an
ordinance to define and establish - the
width and manner of building sidewalks
in Dalles City, beine ordinance No. 270,
which passed tbe Common Council of
Dalles City May 10th, 1893, except as
otherwise hereinbefore specified.
