In September. 1917. milk consumers In
Portland were using 16.000 gallons of
milk dally. The daily use of milk now
Is 16.700 rations, according to figures
prepared by Dr. Ceorge Parrlsh, city
health officer. Based on population the
milk consumption at the present time la
only 23-100 quart per capita.
The milk consumption In Seattle has
Increased from 20.000 gallons dally In
September to IC.000 gallons per day In
April, or a per capita consumption of
32-100 quart per day.
"In spite of the big Increase in dodu-
latlon In Portland, there has been no '
Increase In the consumption of milk
since September. 1917," said Dr. Parrlsh.
"Seattle's daily consumption of milk,
although grenter than ours, is inade
quate, according to recent experiments
In nutrition by Drs. Sherman and Mc
C'ollum and others. It Is therefore
alarmingly apnarent that' Portland's
consumption of milk Is less than half of
.what it should be. The growing boys
and girls, the coming generation, will
have to pay the price for this deficiency
In diet."
Milk Unexcelled as Food
According to Ir. I'arrish this condi
tion should not exist, and the only rea
son, for It, Is that the consumer has a
mistaken Idea that milk is costly in
comparison with otheq foods, and is
therefore attempting to get along wlth
' out milk.
K. C. Calloway, city milk chemist, to
illustrate that milk Is not only one of
the most economic foods under present
high prices, but a very necessary food,
has prepared a comparison in a family
of four. ,
"In this family," Chemist Calloway
said, "is a man 2. year's old working in
the shipyards, a woman, 30 years old,
keeping house and working a war gar-
. den ; a boy of 6 years attending school
and a girl of 8 attending school.
"In case 'A' this family buys food
with no purpose In mind other than to
get enough to satisfy .their appetite
consuming one pint of milk per day. A
sample menu in this family, would be:
"Breakfast Corn flakes and milk,
bacon and eggs, buttered toast and Jelly
and coffee. Kor luncheon Rice-tomato
soup, boiled potatoes and gravy, fried
round steak, corn bread and butter, ap
pie pie and tea. For dinner, fruit salad.
baked potato, scrambled eggs, whole
wheat bread and butter, corn starch
pudding and cake.
"In case 'B the family endeavor to
purchase food with the idea of getting
the most for their money, and to main
tain the health of the family by supply
ing the proper kinds of food , as well as
the proper amounts. In this case they
find they can use three quarts of milk
each day. In addition to butter, cheese
and other milk products. A. sample
menu In this case would be :
"Breakfast Grape fruit, oat meal
mush and milk, creamed eggs on toast,
toast and butter. Jelly and cocoa. Lunch
eon Cream-tomato soup, mashed pota
toes, lamb with curry sauce, stewed
squash, corn bread and butter, rice pud
ding and milk. Dinner Lettuce salad,
baked potato, macaroni and cheese,
whole wheat bread and butter, canned
peaches, cake, milk for the children.
"The daily food requirements for this
family, according to the latest stand
ards would be 96.000 calories, 3187
graim of protein, 40 grains of lime. 83

Vacation Time in Berry
Fields of Oregon.
Inroads made by shipyards and other
wartime industries on the labor popu
lation of Oregon, especially where they
nave minnea out rami lies in agricul
tural districts, is making the task of
forecasting the amount qf farm help
needed In Oregon this year a very diffi
cult one. according to J. W. Brewer,
federal farm help specialist for Oregon.
In order to handle the 111! crops of
the state. Including hay. grain, fruit and
berftes. there will have to be a con
certed effort on the part of every agen
cy and every Individual who canbe of
assistance, Mr. Brewer declares.' This
will necessitate sending from Portland
and other labor centers a larger num
ber of helpers than has been the case
In former years.
"Portland grade school teachers are
now organising with ,a view to volun
teering for work during the vacation
period. In many Instances they con
template going Into the berry patches,
hop fields and orchards, . but many are
willing to taker positions of other nature
In order to relieve men for farm work."
Mr. Brewer said today."
"In the the vicinity of Salem there
will be needed about "000 loganberry
pickers this season. Other parts of the
valley will take as many more. From
100 to 1500 strawberry pickers will
have to be sent to Hood River and 600
cherry pickers U1 bo needed, at The
Dalles and vicinity.
"Later the hop fields will require a
considerable number of pickers ss will
also the , Hood River and .valley fruit
sections. Farmers In several wheat
counties are caning for help In small
groups. Crook county needs t or 10
men -and a like number Is wsnted In
Wallowa county. A few more are need
ed In Sherman and Morrow counties and
the nurseries of Washington county
want 20 men. The wage in the wheat
growing- sections is 160 a mouth- and
board. The nurseries pay S3 a day with
out board.. Many Individual calls for
help are on file- and there are suffi
cient idle or unprofltably employed men
to. supply every call."

Milk Cheapens Cost
"In other words, it is possible to save
from $1 to $2 per month per person in
the money expended for food If a quart
of milk is purchased for each child and
a pint of . milk , for each adult a day.
There may be exceptions to this in case
of large families, but there are no ex
ceptions regarding the inadequacy of. the
diet if the milk la not used.
"Milk can be used in cooking to make
creamed vegetables, chowders, gravies,
custards, puddings, etc. It should be
used as a food and masticated as a food.
"A good rule that any house wife can
apply is:
i "Spend one fourth of money for vege
tables and fruit.
"Spend half of money for bread, cer
eals and' sweets.
; "Spend one fourth of money for milk
and dairy products.
"Spend one fourth of money for meat
and eggs."

Awakened by smoke from a fire which
started in the basement of the Blind
Girls' Sunshine home in Brooklyn early
today, Rosa Cohen, 9 years old, herself
blind, led 15 sightless tots to safety.
The blind girls, ranging between 5
and -12 years of age. were awakened and

Sheepman Is Shot
Klamath Falls. April 20. A telephone
message wad received this afternoon by
District Attorney Duncan from Luther
R. Holbrook, a prominent sheepman of
Eastern Klamath county, that another
sheepman, whose, name was not given.
had been shot. The shooting occurred
in the Dry Prairie section of Langell
valley, about 50 miles east of Klamath
Falls. Duncan left with a deputy sher
iff for the scene of the shooting. Sev
eral sheep outfits make their headquar
ters In the Dry Prairie district during
the lambing season.
